Before you start

Before you begin, ensure that your oven is fully preheated to 375°F (190°C) as this is essential for the cornbread to rise properly. Prepare your broccoli by washing it thoroughly, drying it, and chopping it into uniform, small florets.

Having all your ingredients measured and ready before you start assembling will make the process much smoother. If you are using a glass or ceramic baking dish, ensure it is clean and lightly greased if necessary, though an enameled baker usually requires minimal preparation for a successful release.

Ingredients at a glance (3)
  • 2 cups chopped broccoli florets
  • 1 package prepared cornbread batter with cottage cheese
  • 1 1/2 cups shredded cheddar cheese

Instructions

Assembling the base

  1. Prepare the broccoli base
Preheat the oven to 375°F (190°C). Arrange the chopped broccoli florets in an even layer across the bottom of a 9x13 inch enameled rectangular baker.
Look for broccoli is evenly spread
Tip Ensure the florets are cut into small, uniform pieces so they cook through evenly.

The broccoli should be spread in a single, even layer at the bottom of the baker. It is important that the florets are not piled too high, as this will interfere with the even baking of the cornbread batter. Ensure the baker is clean and ready for the batter to be poured directly over the vegetables, creating a seamless foundation for the dish.

Adding the layers

  1. Add batter and cheese
Pour the prepared cornbread batter, which contains cottage cheese curds, directly over the layer of broccoli. Spread the batter gently with a spatula to cover the florets completely. Sprinkle the shredded cheddar cheese evenly over the top of the batter.
Look for batter covers broccoli and cheese is spread
Tip Do not overmix the batter if preparing it from scratch to keep the texture light.

The batter must be poured slowly and evenly over the broccoli, using a spatula to spread it into the corners of the dish. Once the batter is leveled, the cheddar cheese should be scattered in a thick, uniform layer across the entire surface.

This cheese layer will create a golden, flavorful crust that seals in the moisture of the broccoli and cornbread during the baking process.

Baking to perfection

  1. Bake and serve
Place the baker in the center of the oven and bake for approximately 30 minutes, or until the edges are golden brown and bubbling. Remove from the oven and let it rest for 5 minutes before slicing into squares.
Look for edges are golden and bubbling
Tip Use a sharp knife to slice the cornbread for clean, neat edges when serving.

At the end of the baking phase, the cornbread should look firm and golden on top, with the cheese fully melted and slightly browned. The edges of the dish will show bubbling, which indicates that the juices have been properly incorporated. Once removed, the dish should be left to rest, allowing the steam to dissipate and the crumb to stabilize for perfect slicing.

Common mistakes

Avoid overcrowding the bottom of the dish with too much broccoli, as this can prevent the cornbread batter from setting correctly and may result in a soggy base. Similarly, ensure that your batter is not too thin; if you are using a store-bought mix, follow the instructions for a thicker consistency rather than a pourable one.

Lastly, do not skip the resting time, as cutting into the cornbread immediately after taking it out of the oven will cause it to crumble, making it difficult to serve in neat, attractive squares.

How to tell it’s done

The cornbread is done when the top has developed a deep golden-brown color and the edges appear slightly crisp and are visibly bubbling. A toothpick inserted into the center of the dish should come out clean, with no wet batter clinging to it.

The cheese on top should be completely melted and lightly browned in spots. Allowing the dish to rest for at least five minutes after removing it from the oven is vital, as it lets the internal structure set, making it easier to slice.
