Before you start

Before you begin cooking, organize your workspace to prevent cross-contamination. Set up a clean cutting board specifically for the raw chicken, and another for prepping the spinach and cheeses.

Measure out your poultry seasoning, cheeses, and cream cheese into small bowls. Ensure your cream cheese is completely softened at room temperature so it blends smoothly with the spinach. Preheat your oven to 400°F (200°C) and have your foil pan ready on the counter.

Ingredients at a glance (7)
  • 4 boneless, skinless chicken breasts
  • 1 tbsp poultry seasoning
  • 4 oz cream cheese, softened
  • 1 cup fresh spinach, chopped and sautéed
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 cup shredded cheddar cheese

Instructions

Preparation and Filling Mixture

  1. Season the Chicken
Preheat the oven to 400°F (200°C). Pat the chicken breasts dry with paper towels. Rub the chicken breasts with the poultry seasoning, coating them evenly on all sides.
Look for The chicken should be completely and evenly coated in the seasoning.
Tip Make sure the chicken is patted completely dry so the seasoning adheres properly.
  2. Prepare the Cheese Filling
In a medium mixing bowl, combine the softened cream cheese, chopped sautéed spinach, shredded mozzarella, and grated parmesan cheese. Mix thoroughly with a spatula or spoon until the ingredients are fully incorporated and form a thick, creamy paste.
Look for The mixture should be uniform with no large white lumps of cream cheese remaining.
Tip Ensure the cream cheese is fully softened at room temperature for effortless mixing.

At the end of this phase, your chicken breasts should be evenly coated in the fragrant poultry seasoning. The spinach and cheese filling should be a thick, uniform paste with no large lumps of cream cheese. The kitchen should begin to smell of warm herbs as the oven preheats.

Stuffing and Initial Bake

  1. Stuff the Chicken Breasts
Carefully slice a deep pocket horizontally into the thickest part of each seasoned chicken breast, taking care not to cut all the way through. Spoon a generous portion of the creamy spinach and cheese filling into each pocket, pressing gently to seal.
Look for The chicken breasts should look plump and hold the filling securely inside.
Tip Stop slicing about half an inch before the opposite edge to keep the filling enclosed.
  2. Initial Bake
Place the stuffed chicken breasts in a foil pan or baking dish. Bake in the preheated oven for 20 minutes. Carefully remove the pan and sprinkle the shredded cheddar cheese evenly over the top of each chicken breast.
Look for The chicken should look mostly cooked and opaque before adding the cheddar cheese.
Tip Spread the cheddar evenly across the top to create a perfect melting shield.

The chicken pockets are now stuffed plump with the creamy filling. After the initial twenty-minute bake, the chicken will have turned opaque and started to release its juices into the pan. The meat will look par-cooked, and the spinach filling inside will be hot and starting to melt.

Cheesy Crust and Final Bake

  1. Melt the Cheese and Rest
Return the pan to the oven and bake for an additional 5 minutes, or until the chicken is cooked through and the cheddar cheese is melted, bubbling, and golden brown. Ensure the internal temperature reaches 165°F (74°C) on a meat thermometer. Let rest for 5 minutes before slicing and serving.
Look for The cheese on top should be bubbling rapidly, golden-brown, and sizzling.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Letting the chicken rest prevents the hot cheese filling from running out when sliced.

In this final phase, the cheddar cheese topping melts and transforms into a bubbling, golden-brown crust.

You will hear a loud sizzling sound from the pan and smell the rich aroma of toasted cheese. The chicken is beautifully bronzed, firm, and resting in a shallow pool of savory juices.

Common mistakes

The most common mistake is cutting too deep or all the way through the chicken breast when creating the pocket. This allows the creamy cheese filling to escape entirely during baking.

To prevent this, place your hand flat on top of the breast and carefully slice horizontally, stopping about half an inch before the opposite edge. Another mistake is using wet spinach; squeeze out all liquid thoroughly before mixing.

How to tell it’s done

To ensure your chicken is safe and perfectly cooked, always use a reliable digital meat thermometer. Insert the probe into the thickest part of the chicken meat, avoiding the cheese filling.

The chicken is fully done when it registers an internal temperature of 165°F (74°C). The meat should feel firm to the touch, and any juices running out should be completely clear, not pink.

  • Poultry: 165°F (74°C) in the thickest part
