Tips for success
To achieve the ultimate cheese pull shown in the video, use a combination of sharp cheddar and low-moisture mozzarella cheese. Mozzarella provides the perfect elastic structure for long, dramatic cheese stretches, while cheddar delivers the bold, sharp flavor that pairs so well with seasoned beef.
Always shred the cheese yourself from a block rather than buying pre-shredded packages. Store-bought shredded cheese is coated with starch to prevent clumping, which interferes with its ability to melt into a smooth, stretchy blanket.
If you find that the top of your casserole is browning too quickly before the biscuit crust has had a chance to bake through, loosely tent a sheet of aluminum foil over the baking dish during the last ten minutes of baking.
This reflects the direct heat and allows the center of the casserole to cook thoroughly without burning the delicate cheese crust. Let the baked casserole rest on the counter for at least five to ten minutes before slicing to allow the layers to set, making it much easier to serve clean portions.
Variations
- Spicy Jalapeño Cattle Drive: Add diced pickled jalapeños to the beef mixture and top with pepper jack cheese for an extra kick of heat.
- Vegetarian Black Bean Casserole: Substitute the ground beef with a mixture of black beans, pinto beans, and corn seasoned with taco spices.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze wrapped portions in a freezer-safe container for up to 2 months. Thaw in the fridge overnight before reheating.
- Reheat
- Reheat individual slices in the microwave for 1 to 2 minutes, or cover with foil and bake at 350°F (175°C) for 15 minutes.
Any leftover casserole should be allowed to cool to room temperature for no more than two hours before being stored. Cover the baking dish tightly with aluminum foil or plastic wrap, or transfer individual portions to an airtight container. Store the leftovers in the refrigerator for up to three to four days. To freeze, wrap the cooled portions tightly in plastic wrap and then foil, and store in the freezer for up to two months.
You can prepare the seasoned ground beef up to a day in advance and store it in the refrigerator. However, do not assemble the casserole with the biscuit dough until you are ready to bake. If the biscuit dough sits in contact with the beef for too long before baking, it will absorb the moisture and become soggy, preventing it from rising properly in the oven.
Serving ideas
Serve this hearty casserole hot, straight from the oven, to maximize the stretchy, melted cheese pull. It is a complete, filling meal on its own, but it pairs beautifully with fresh, cool toppings that contrast with the rich, warm flavors.
Set out bowls of shredded lettuce, diced fresh tomatoes, sliced black olives, and chopped green onions so everyone can customize their plate. A dollop of fresh guacamole or a drizzle of spicy hot sauce also makes an excellent addition.
To balance the richness of the beef and cheese, serve this dish alongside a crisp, refreshing green salad dressed with a simple vinaigrette. A side of sweet corn salad or black bean salsa also complements the southwestern flavors of the seasoned beef.
For a festive family dinner, serve it with a basket of warm tortilla chips and your favorite salsa, allowing guests to scoop up any extra beef and cheese that tumbles from their slice.

Easy Cattle Drive Casserole with a Bubbly Cheese Crust

Ingredients
- 16 oz refrigerated biscuit dough
- 1.5 lb ground beef
- 1 oz taco seasoning
- 2 cups shredded cheese
- 4 oz diced chilies, drained
- 1 tsp parsley flakes
Instructions
- Place a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, for about 8 to 10 minutes. Cook the ground beef until it is completely browned and has reached a safe internal temperature of 160°F (71°C). Drain any excess grease from the skillet.
- Stir the taco seasoning into the browned ground beef. Simmer the mixture over low heat for 2 to 3 minutes, stirring occasionally, until the beef is evenly coated with the spices. Remove the skillet from the heat and set aside.
- Open the refrigerated biscuit dough and press the individual biscuits into the bottom of the prepared 9x13-inch baking dish, stretching them to cover the entire surface and pinching the seams together. Spread the seasoned ground beef evenly over the biscuit layer.
- Scatter the diced chilies over the seasoned beef, then cover with a generous layer of shredded cheese. Sprinkle parsley flakes over the top. Place the baking dish in the preheated oven and bake for 20 to 25 minutes until the cheese is bubbly and golden-brown. Let rest for 5 minutes before serving.
