Before you start

Before beginning the assembly, ensure your oven is preheated to 375°F (190°C) so it is ready once the layering is complete.

Gather all your ingredients on the counter to streamline the process. You will need a large skillet for browning the meat and a 9x13 inch casserole dish for the final bake.

If you are using dry noodles that require boiling, prepare them according to the package instructions until they are al dente, but if you are using no-boil noodles, they can be used directly from the box.

Ingredients at a glance (5)
  • 1 lb ground beef
  • 24 oz marinara sauce
  • 1 box lasagna noodles
  • 15 oz ricotta cheese
  • fresh parsley for serving

Instructions

Browning the Meat

  1. Prepare the meat sauce
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and cooked through to 160°F (71°C). Stir in the marinara sauce and simmer briefly to combine flavors.
Look for the meat is no longer pink and the sauce is bubbling
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip ensure the meat is browned evenly for the best flavor distribution

The meat should be fully browned with no pink remaining. The sauce should be well-combined and aromatic, with a consistent thickness that coats the back of a spoon. Before moving to the assembly phase, check that the skillet is clean and your workspace is clear for the layering process.

Layering the Lasagna

  1. Assemble the lasagna
In a 9x13 inch casserole dish, spread a thin layer of the meat sauce. Top with a layer of lasagna noodles, followed by a generous layer of ricotta cheese and more meat sauce. Repeat the layers until all ingredients are used, ending with a layer of sauce and cheese.
Look for the layers are neatly stacked
Tip spread the ricotta evenly for consistent flavor in every bite

Each layer should be spread evenly to the edges of the casserole dish. Check that there is a sufficient amount of sauce at the bottom to prevent sticking. The ricotta should be dolloped or spread carefully to cover the noodles without displacing the meat sauce underneath.

Baking to Perfection

  1. Bake and finish
Preheat your oven to 375°F (190°C). Cover the dish with foil and bake for 30 minutes, then remove the foil and bake for another 10 to 15 minutes until the cheese is golden and bubbly. Garnish with fresh parsley before serving.
Look for the cheese is melted, golden, and bubbling
Tip let the lasagna rest for at least 10 minutes before slicing to ensure clean squares

The top should be golden and bubbling, indicating the internal temperature has been reached. Check for a firm structure by gently tapping the side of the dish. Once removed from the oven, ensure it rests for at least 10 minutes to allow the layers to firm up before serving.

Common mistakes

Avoid overcooking the noodles before assembly, as they will continue to absorb moisture and soften in the oven. If they are too soft initially, the final lasagna may become mushy or lose its structural integrity.

Another common mistake is adding too little sauce; if the lasagna seems dry, it will not bake properly. Ensure you have enough sauce to cover the noodles completely at each layer, which helps the pasta cook evenly and prevents the dish from drying out during the long bake.

How to tell it’s done

The lasagna is done when the internal temperature of the meat sauce reaches 160°F (71°C) and the cheese on top is melted, golden-brown, and actively bubbling. The edges of the pasta should be tender when pierced with a fork.

Using a thermometer is the best way to verify the center has reached a safe temperature. Remember that the dish will continue to cook slightly while it rests, so pulling it out when it looks perfectly golden is ideal.
