Before you start

Before beginning the assembly, ensure the oven is fully preheated to 375°F (190°C). Prepare all ingredients by having the pasta cooked and drained, the beef browned, and the cheese grated or ready for use. Have the baking dish cleaned and within reach.

Clearing the workspace allows for a more efficient assembly process, as stuffing shells requires attention to detail. Having all components organized ensures the assembly phase proceeds smoothly without unnecessary pauses.

Ingredients at a glance (5)
  • 12 ounces jumbo pasta shells
  • 1 lb ground beef
  • 24 ounces marinara sauce
  • 2 cups shredded mozzarella cheese
  • fresh parsley, for serving

Instructions

Preparing the base components

  1. Prepare the pasta and meat
Bring a large pot of salted water to a boil and cook the jumbo shells according to package directions until al dente. Drain well. In a separate skillet, brown the ground beef over medium-high heat until fully cooked. Ensure the meat reaches an internal temperature of 160°F (71°C) to ensure safety. Drain any excess grease from the skillet.
Look for The beef should be browned and no longer pink.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Do not overcook the pasta shells as they will continue to soften in the oven.

The pasta shells should be tender but still firm to the touch, indicating they are ready for stuffing. The ground beef must be browned thoroughly, with no traces of pink visible, and drained of excess fat.

Ensure the meat is seasoned according to preference before starting the filling process to guarantee a flavorful center in every shell.

Assembling the stuffed shells

  1. Assemble the shells
Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish to prevent sticking. Stuff each cooked pasta shell generously with the browned ground beef mixture and arrange them side by side in the prepared baking dish. Top the shells with the remaining marinara sauce and cover evenly with the shredded mozzarella cheese.
Look for The shells should be arranged snugly in the dish.
Tip Use a spoon to make stuffing the shells easier and less messy.

The baking dish should be prepared with a thin base layer of marinara sauce. Each shell must be filled completely with the meat mixture and arranged neatly in the dish. The remaining sauce should be distributed evenly over the top, followed by a generous, uniform layer of mozzarella cheese that covers the pasta shells completely.

Final bake and browning

  1. Bake until bubbly
Cover the baking dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and lightly browned. Garnish with fresh parsley before serving while hot.
Look for The cheese should be golden and bubbling.
Tip Watch the cheese closely during the final minutes to prevent burning.

After the initial covered baking period, the shells should be heated through. Removing the foil allows the cheese to melt and brown properly. Once the cheese is bubbling and golden, the dish is ready to be removed from the oven. Allow the shells to rest for a few minutes before serving to ensure the sauce and cheese set slightly.

Common mistakes

A common mistake is overcooking the pasta shells before stuffing, which causes them to tear easily. Ensure the water is boiling before adding the pasta and set a timer to monitor the cooking process closely.

Another error is failing to drain the ground beef adequately after browning; excess fat can make the sauce greasy and prevent it from clinging properly to the shells. Finally, ensure the shells are tightly packed in the dish to maintain their shape during the baking process.

How to tell it’s done

The dish is considered done when the cheese is completely melted, bubbling, and has developed a light golden brown color on the surface. The sauce should be simmering around the edges of the baking dish.

Since the ground beef is fully cooked during the preparation phase, the final oven time is primarily to meld the flavors and heat the dish through, ensuring the internal temperature of the entire casserole reaches a safe, uniform heat.
