Tips for success
For the most flavorful result, let the cooked pork rest in the sauce for 5 to 10 minutes after shredding. This allows the meat to absorb the liquid and become even more succulent.
If you have time, you can also refrigerate the shredded pork overnight and reheat it the next day — the flavors meld even more.
To achieve a thicker sauce, remove the lid during the last 30 minutes of cooking and turn the slow cooker to HIGH. This lets some of the liquid evaporate.
Alternatively, you can whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the sauce after shredding, then cook for 10 minutes until thickened.
Variations
- Spicy Kick: Add 1 teaspoon of smoked paprika and 1/2 teaspoon of cayenne pepper along with the onion soup mix for a smoky, spicy twist. Or stir in 2 tablespoons of hot sauce after shredding to brighten the flavor.
- Herb Infusion: Scatter 2 sprigs of fresh thyme and 1 sprig of rosemary over the roast before cooking. Remove the herb stems before shredding. The herbs add a fragrant, earthy note that complements the mushrooms and Dijon.
- Creamy Mushroom Lovers: Double the mushrooms to 16 ounces and add 1/2 cup of extra sour cream. After shredding, stir in 1/2 cup of grated Parmesan cheese for an even richer, more decadent sauce.
- Balsamic Glaze: Replace 1/4 cup of the au jus with balsamic vinegar and add 1 tablespoon of brown sugar. The balsamic adds a sweet-tart depth that pairs beautifully with the pork and mushrooms.

This recipe is ideal for meal prep. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate.

Serving ideas
Serve the shredded pork over steamed white rice, as shown in the video, for a classic and satisfying meal. The rice soaks up the creamy Dijon gravy beautifully.
For a lower-carb option, serve it over cauliflower rice or alongside roasted vegetables. The pork also makes excellent sandwiches on soft rolls with a spoonful of the gravy.
For a complete dinner, add a simple green salad or steamed green beans on the side. The tangy, creamy sauce pairs well with bright, acidic sides like pickles or a vinegar-based slaw. Leftovers can be used in tacos, stuffed into baked potatoes, or stirred into pasta for a quick and flavorful meal.

Dump-and-Go Crockpot Dijon Cream Pork Shoulder

Ingredients
- 4 lb boneless pork shoulder roast
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 1 cup sour cream
- 1/4 cup whole-grain Dijon mustard
- 1 cup beef au jus
- steamed white rice, for serving
Instructions
- Place the pork shoulder roast in the center of a 6-quart slow cooker. Sprinkle the dry onion soup mix evenly over the top of the roast. Scatter the halved cremini mushrooms around the sides of the pork, tucking them into the corners of the slow cooker.
- Dollop the sour cream over the top of the roast, spreading it slightly with the back of a spoon. Add the whole-grain Dijon mustard in small spoonfuls over the sour cream. Pour the beef au jus along the side of the roast, being careful not to wash the seasonings off the top.
- Cover the slow cooker with the lid. Cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and easily shreds. Do not open the lid during cooking to keep the heat and moisture inside. Let it rest for 3 minutes before slicing.
- Remove the pork roast to a cutting board. Using two forks, shred the meat into bite-sized pieces, discarding any large pieces of fat. Return the shredded pork to the slow cooker and stir it into the sauce and mushrooms. Let it rest in the warm sauce for 5 minutes to absorb the flavors.
- Spoon steamed white rice onto serving plates. Top with the shredded pork and mushrooms, and ladle the creamy Dijon pan gravy over the top. Serve hot.
