Before you start

Heat the oven to 350°F (175°C) and position a rack in the center. Line a 9x9-inch baking pan with parchment paper, leaving a 2-inch overhang on two opposite sides.

Prepare the brownie batter according to your recipe or box instructions, and have the dulce de leche and shredded coconut measured and ready. Warm the extra dulce de leche only after the brownies are baked and cooled slightly, so it stays pourable.

Ingredients at a glance (4)
  • 1 batch dark chocolate fudge brownie batter, to taste
  • 1/2 cup dulce de leche
  • 1 cup sweetened shredded coconut
  • warm dulce de leche, for drizzling, to taste

Instructions

Batter and Swirl

  1. Prepare the Batter and Pan
Heat the oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, leaving an overhang on two sides for easy lifting. Prepare the dark chocolate fudge brownie batter according to its recipe or box directions. The batter should be thick and glossy, not too loose.
Look for The batter is smooth, dense, and coats the spatula thickly.
Tip Use a metal pan for even baking and a clean lift.
  2. Spread the Base
Scrape the prepared brownie batter into the lined pan and spread it into an even layer, reaching all the corners. Smooth the top with the spatula so the surface is level. This helps the swirl distribute evenly.
Look for The batter fills the pan evenly, about 1 inch deep.
Tip Tap the pan gently on the counter to release any air bubbles.

The batter is thick and glossy, spread evenly in the pan. The dulce de leche forms golden ribbons when swirled, and the coconut covers the top in a light, even layer. The surface looks marbled and inviting, with pockets of caramel peeking through the dark batter. Before baking, press the coconut gently so it stays in place.

Bake and Cool

  1. Swirl in Dulce de Leche
Drop spoonfuls of the dulce de leche over the brownie batter, spacing them evenly. Use a butter knife or skewer to gently swirl the caramel into the batter, creating ribbons without fully mixing. Leave some pockets of caramel visible for a marbled effect.
Look for Golden caramel ribbons streak through the dark batter.
Tip Do not over-swirl; distinct ribbons create the best texture.
  2. Add the Coconut
Sprinkle the sweetened shredded coconut evenly over the top of the swirled batter. Gently press the coconut into the surface with your fingertips or the spatula so it adheres during baking. The coconut will toast and crisp as the brownies bake.
Look for The coconut covers the top in a light, even layer.
Tip Press lightly so the coconut stays on top rather than sinking.
  3. Bake the Brownies
Place the pan in the oven and bake at 350°F (175°C) for 25 minutes, or until the edges are set and the top is lightly toasted. The coconut should turn golden brown and the caramel should bubble around the edges. A toothpick inserted into the center should come out with a few moist crumbs, not wet batter.
Look for The top is golden, the caramel bubbles, and the kitchen smells of toasted coconut.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Start checking at 22 minutes; ovens vary. The center should be just set.
  4. Cool in the Pan
Transfer the pan to a wire rack and let the brownies cool in the pan for at least 10 minutes. The caramel will set slightly as it cools, making the brownies easier to slice. Do not rush this step; cutting too soon will cause the squares to crumble.
Look for The brownies pull away from the pan edges slightly.
Tip Cooling on a rack allows air to circulate and prevents a soggy bottom.

The top is golden brown with toasted coconut, and the caramel bubbles around the edges. The kitchen smells of toasted coconut and caramel. A toothpick inserted into the center comes out with a few moist crumbs.

The brownies have pulled away from the pan edges slightly and are set but still soft in the center. Let them cool in the pan for at least 10 minutes before slicing.

Slice and Serve

  1. Lift and Slice
Using the parchment overhang, lift the entire block of brownies out of the pan and place it on a cutting board. Use a sharp knife to cut into 16 squares, wiping the blade between cuts for clean edges. The brownies are fudgy, so expect some caramel to cling to the knife.
Look for Clean, neat squares with visible caramel and coconut swirls.
Tip For the cleanest cuts, use a plastic knife or dip the knife in hot water and wipe dry.
  2. Drizzle and Serve
Warm the extra dulce de leche in a small saucepan over low heat or in the microwave for 15 seconds. Drizzle it generously over the brownies just before serving. The warm caramel should pool slightly on top, adding a glossy finish and extra richness.
Look for Glossy caramel drips down the sides of the brownie squares.
Tip Serve the extra caramel on the side so everyone can add more.

The brownies are cut into clean squares with visible caramel and coconut swirls. The extra dulce de leche is warmed and drizzled over the top, pooling in the crevices. Each square is chewy, fudgy, and studded with toasted coconut and caramel. Serve warm for the best texture and flavor.

Common mistakes

Overmixing the batter can make the brownies tough and cakey instead of fudgy. Mix just until the dry ingredients are incorporated. Another common issue is overbaking — check the brownies at 22 minutes and pull them out as soon as a toothpick comes out with moist crumbs.

Cutting the brownies while they are still hot can cause them to crumble; let them cool for at least 10 minutes, or until the pan is warm but not hot.

How to tell it’s done

The brownies are done when the edges are set and pulling away from the pan, and the top is lightly golden with toasted coconut. A toothpick inserted into the center should come out with a few moist crumbs, not wet batter.

The caramel should be bubbling around the edges, and the coconut should smell nutty and toasted. If using a thermometer, the center of the brownies should register at least 160°F (71°C) to ensure the eggs are fully cooked.
