Before you start

Preheat the oven to 350°F (180°C). Butter a 10-inch cast-iron skillet generously. Measure out all ingredients. If your kadayıf pastry is in long strands, chop it into smaller pieces so it toasts evenly.

Have the pistachio cream and chocolate chips ready. The cookie dough comes together quickly, so having everything prepped ensures a smooth assembly. Let the egg come to room temperature for easier mixing.

Ingredients at a glance (13)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 cup dark cocoa powder
  • 1 cup shredded kadayıf pastry
  • 2 tbsp butter
  • 2/3 cup sweet pistachio cream
  • 3/4 cup dark chocolate chips
  • pistachio gelato, for serving
  • crushed Antep pistachios, for serving

Instructions

Phase 1: Prep and Mix

  1. Toast the Kadayıf
Heat the 2 tbsp butter in a small skillet over medium heat. Add the shredded kadayıf pastry and cook, stirring constantly, until golden brown and crisp, about 3-4 minutes. Remove from heat and let cool slightly.
Look for The kadayıf turns golden and sounds crackly when stirred.
Tip Keep stirring to prevent burning; the pastry browns quickly once it starts.
  2. Make the Pistachio Core
In a small bowl, mix the toasted kadayıf with the sweet pistachio cream until well combined. Set aside.
Look for The mixture forms a thick, spreadable paste.
Tip If the mixture seems too dry, add a spoonful more pistachio cream.
  3. Mix the Cookie Dough
In a large bowl, whisk the melted butter, brown sugar, and white sugar until smooth. Whisk in the egg and vanilla extract. Add the flour and dark cocoa powder, and stir with a rubber spatula until just combined. Fold in the dark chocolate chips.
Look for The dough is thick, glossy, and holds together when pressed.
Tip Do not overmix; stop when no streaks of flour remain.

The kadayıf is golden and crisp, and the pistachio mixture forms a thick, spreadable paste. The cookie dough is glossy and holds together when pressed. The skillet is buttered and ready. The kitchen smells of toasted nuts and chocolate. Everything is prepped and measured, so the assembly will be smooth.

Phase 2: Assemble and Bake

  1. Assemble the Skillet
Press half of the cookie dough evenly into the bottom of a buttered 10-inch cast-iron skillet. Spread the pistachio kunefe mixture over the dough, leaving a small border. Top with the remaining dough, pressing gently to seal the edges.
Look for The top is mostly covered with dough, with some pistachio peeking through.
Tip Wet your fingers slightly to press the dough without sticking.
  2. Bake the Cookie
Bake at 350°F (180°C) for 16 minutes, until the edges are set and the center is still slightly soft. The egg reaches 160°F (71°C) when fully cooked.
Look for The edges look firm and the top is cracked, but the center gives slightly when tapped.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip A toothpick inserted near the edge should come out with moist crumbs, not wet batter.

The skillet is filled with alternating layers of dough and pistachio filling. As it bakes, the edges begin to puff and set, while the center remains soft. The chocolate chips melt into puddles. The kitchen fills with the aroma of chocolate and pistachios. The top is slightly cracked, and the edges are firm to the touch.

Phase 3: Top and Serve

  1. Top and Serve
Let the skillet cool for 5 minutes. Top with scoops of pistachio gelato and sprinkle with crushed Antep pistachios. Serve warm, scooping through the layers to get the gooey center.
Look for The gelato melts slightly over the warm cookie, creating ribbons of cream.
Tip Use a large spoon to dig deep and get all three layers in every bite.

The warm cookie is topped with cold pistachio gelato, which begins to melt and create creamy swirls. Crushed pistachios add extra crunch.

When scooped, the layers are visible: fudgy chocolate, bright green pistachio, and molten chocolate. The dessert is best served immediately, with the gelato melting into the warm cookie.

Common mistakes

One common mistake is overbaking the cookie, which results in a dry, cakey texture instead of a gooey center. Keep a close eye on it and pull it out when the edges are set but the middle still has a slight jiggle.

Another pitfall is not toasting the kadayıf enough; it should be deeply golden and crisp before mixing with the pistachio cream, otherwise it will become soggy during baking. Also, be sure to press the top layer of dough evenly to seal the filling, or it may leak out.

How to tell it’s done

The cookie is done when the edges are set and the top is firm to the touch, but the center still looks slightly soft and underdone. A toothpick inserted near the edge should come out with a few moist crumbs, not wet batter.

The internal temperature of the egg should reach 160°F (71°C) to ensure it is fully cooked. The center will continue to set as it cools, so do not overbake. The contrast between the set edges and the gooey center is what makes this dessert special.

  • Egg dishes: 160°F (71°C) in the thickest part
