Before you start

Before starting, heat the oven to 350°F (175°C) and position a rack in the center. Line a 9x5-inch loaf pan with parchment paper, leaving some overhang on the long sides to lift the bread out easily. Measure out all ingredients and bring the egg to room temperature if possible.

Mash the bananas in a large bowl until mostly smooth, with a few small lumps for texture. Have the melted butter slightly warm, not hot, so it doesn't cook the egg. Set out the dry ingredients and chocolate chips so the batter comes together quickly and evenly.

Ingredients at a glance (12)
  • 3 ripe bananas (360 g)
  • 8 tbsp melted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/4 cup sour cream
  • 1 tsp vanilla bean paste
  • 1 1/3 cups all-purpose flour
  • 1/3 cup dark cocoa powder
  • 1 tsp baking soda
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup semi-sweet chocolate chips

Instructions

Mixing the Batter

  1. Mash and Mix Wet Ingredients
Heat the oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper. In a large bowl, mash the ripe bananas with a fork until mostly smooth. Add the melted butter, granulated sugar, brown sugar, egg, sour cream, and vanilla bean paste. Whisk until the mixture is silky and well combined.
Look for The mixture should be smooth and glossy, with no streaks of egg.
Tip Use very ripe bananas with brown spots for the most banana flavor.
  2. Sift and Fold Dry Ingredients
In a separate bowl, sift together the all-purpose flour, dark cocoa powder, and baking soda. Add the dry ingredients to the wet mixture and gently fold with a spatula until just combined. Fold in 1 cup of semi-sweet chocolate chips, being careful not to overmix.
Look for The batter should be thick and fudgy, with no dry streaks of flour.
Tip Overmixing can make the bread tough; fold just until the flour disappears.

The wet mixture should be silky and well combined, with the sugar mostly dissolved. When the dry ingredients are folded in, the batter should be thick, glossy, and fudgy, with no dry streaks. The chocolate chips should be evenly distributed.

The batter will be similar to a thick muffin batter—not too runny, not too stiff. At this point, the kitchen should smell of bananas and chocolate. Before moving on, ensure the batter is uniform and the chips are not all clustered at the bottom.

Baking the Loaf

  1. Pour Batter into Pan
Pour the batter into the prepared loaf pan and spread it evenly with a spatula. Sprinkle the extra 1/4 cup of chocolate chips over the top, pressing them gently into the batter so they stick.
Look for The top should be covered with chocolate chips for a gooey crust.
Tip Press the chips lightly so they don't sink too much during baking.
  2. Bake the Loaf
Bake at 350°F (175°C) for 55 to 60 minutes, or until a toothpick inserted into the center comes out with moist fudgy crumbs, not wet batter. If the top browns too quickly, tent loosely with foil for the last 15 minutes.
Look for The loaf should be risen, cracked on top, and the kitchen smells intensely chocolatey.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Check at 50 minutes; ovens vary, and the toothpick should have a few moist crumbs.
  3. Cool in the Pan
Remove the loaf from the oven and let it cool in the pan on a wire rack for 10 minutes. Then lift the loaf out using the parchment paper and transfer to the rack to cool completely. The internal temperature should reach 160°F (71°C) for the egg to be fully set.
Look for The loaf should be firm to the touch and pull away from the pan edges slightly.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Cooling in the pan helps the structure set; don't skip this step.

After about 50 minutes, the loaf should be risen, with a cracked, domed top. The edges will start to pull away from the pan, and the center should feel firm to the touch. A toothpick inserted in the center will come out with moist crumbs, not wet batter. The internal temperature should be at least 160°F (71°C). The aroma of chocolate and banana will fill the kitchen. If the top is browning too quickly, tent with foil. Once done, let it cool in the pan for 10 minutes.

Cooling and Serving

  1. Slice and Serve
Once completely cool, slice the banana bread with a serrated knife. For the best texture, serve slightly warm so the chocolate chips are melted and oozing. Store leftovers in an airtight container.
Look for The slices should be moist and fudgy, with visible chocolate chips throughout.
Tip Warm slices in the microwave for 10 seconds to re-melt the chocolate.

After cooling in the pan, the loaf should be firm enough to lift out easily using the parchment paper. On the wire rack, it will cool completely. The crust will be slightly crisp, while the inside remains moist and tender. When sliced, the bread should hold together, with visible chocolate chips and a dense, fudgy crumb. It can be served warm for melted chocolate or at room temperature. The loaf should feel heavy for its size, indicating a moist interior.

Common mistakes

One common mistake is overmixing the batter, which develops gluten and results in a dense, tough loaf. Mix just until the flour disappears. Another is using under-ripe bananas, which lack sweetness and moisture.

Also, don't open the oven door during the first 30 minutes of baking, as the temperature drop can cause the loaf to sink in the middle. Overbaking is another pitfall—check early and rely on the toothpick test rather than the clock. If the top browns too fast, cover with foil, but avoid opening the oven too often.

How to tell it’s done

The banana bread is done when a toothpick inserted into the center comes out with a few moist fudgy crumbs, not wet batter. The top should be domed, cracked, and spring back when lightly pressed. The internal temperature should read 160°F (71°C) to ensure the egg is fully set.

If the top is browning too quickly, tent loosely with foil for the last 15 minutes of baking. Cool the loaf in the pan for 10 minutes before transferring to a wire rack to cool completely. Slicing while still slightly warm will give you gooey melted chocolate, but for clean slices, wait until fully cool.
