Six nacho cheese chips, a ladle of warm queso and a hot cast-iron skillet turn an ordinary beef wrap into the loudest crunch on the internet. The tortilla sears into a golden hexagon, the cheese melts into the chips, and every bite snaps. It comes together in about 25 minutes with one skillet and a handful of supermarket staples.

This is the copycat that puts the crunch back in crunchwrap. A 12-inch burrito tortilla is loaded in the center with taco-seasoned beef, warm nacho cheese and a full layer of nacho cheese tortilla chips, then topped with sour cream, shredded lettuce and Mexican cheese blend. The edges fold into a tight hexagon and the whole parcel sears in butter until both faces are crisp and bronzed.

Sliced through the middle, it shows off a bright orange chip band between molten cheese and beef, with a spicy fiesta ranch on the side for dipping. The layers matter as much as the order: hot filling at the bottom, cold toppings above, chips in between so they stay dry and loud.

Ingredients

Makes 1 crunchwrap · serves 1
  • 4 oz ground beef
  • 1 tbsp taco seasoning
  • 1/3 cup warm nacho cheese

  • 1/4 cup shredded iceberg lettuce
  • 1/2 cup shredded Mexican cheese blend
  • 1 tbsp butter, for searing

Spicy fiesta ranch

  • 1/4 cup ranch dressing
  • 1 tsp hot sauce, or to taste
Contains: gluten, milk

Why this recipe works

The build is engineered from the bottom up so every layer keeps its texture. The beef and warm nacho cheese sit directly on the tortilla, where their heat can do the most good: the cheese softens the tortilla from beneath just enough to glue the layers together, while the beef anchors the weight.

The chips go on top of the cheese rather than under it, so they are insulated from direct moisture yet close enough to melt into the sauce along their edges.

The cold layer above the chips is just as deliberate. Sour cream and shredded lettuce release almost no heat, so the chips stay dry and brittle until the knife comes down.

Folding the tortilla into six pleats and searing it seam-side down first locks the shape while the butter browns the pleats into a sealed, hand-held parcel. Two and a half minutes per side is long enough to crisp the tortilla fully without steaming the chips inside.

Notes and substitutions

Choose a 12-inch burrito tortilla, the largest and most pliable on the shelf; thinner street-taco sizes cannot fold around this much filling. Warm nacho cheese from the jar works exactly as well as queso made from scratch here, since it is remelted on the stove anyway.

Use a nacho cheese flavored tortilla chip for the signature orange color and seasoning, and shred the lettuce as fine as coleslaw so it distributes in every bite.

A cast-iron skillet holds an even 375°F (190°C) and browns the pleats far better than a nonstick pan, but any heavy skillet works if the butter foams gently rather than spitting. Assemble the wrap within reach of the stove so it lands in the pan while the pleats are still holding. For two servings, simply cook the wraps one at a time; crowding the pan drops the temperature and steams the crust.

  • ground beef: Ground turkey works well; season the same way and cook it to 165°F (74°C) instead of 160°F (71°C).
  • nacho cheese: Melt 1/3 cup shredded American cheese with 2 tbsp milk over low heat for a quick homemade queso.
  • nacho cheese tortilla chips: Any sturdy corn tortilla chip works, though the nacho cheese coating is what gives the signature flavor and color.
  • ranch dressing: Stir the hot sauce into sour cream thinned with a spoonful of milk for a quick spicy dip.
