Before you start

Before beginning assembly, ensure all components are prepared and at the correct temperature. The chocolate cake layers must be baked and cooled entirely.

The strawberry filling should be whipped to a stable consistency, and the ganache should be smooth and pourable, not hot.

Having all equipment, such as the offset spatula and piping bag, cleaned and ready on your workspace will ensure a seamless assembly process.

Ingredients at a glance (5)
  • 1 recipe chocolate cake layers, store-bought or made ahead
  • 2 cups strawberry cream filling
  • 1 cup dark chocolate ganache
  • 1 cup whipped cream
  • 1 cup fresh strawberries, sliced

Instructions

Layering the cake

  1. Layering the cake
Place the first layer of chocolate cake in the pan. Spread the strawberry cream filling evenly over the surface using an offset spatula to ensure a smooth, uniform layer. Top with the second layer of cake, pressing down gently to secure the filling.
Look for The filling should be spread to the edges of the cake.
Tip Chill the cake for 15 minutes before adding the next layer to keep the filling stable.

The layers should be level and the filling spread to the very edges of the pan. The structure should feel firm and stable, with no visible gaps between the cake and the cream filling before moving on to the ganache application.

Applying the ganache

  1. Applying the ganache
Pour the prepared dark chocolate ganache over the top of the assembled cake. Use an offset spatula to spread it gently toward the edges, allowing it to drip slightly down the sides for a professional finish. Ensure the ganache is smooth.
Look for The ganache should have a glossy, mirror-like finish.
Tip Ensure the ganache is at room temperature so it spreads easily without melting the filling.

The ganache should cover the entire surface of the top cake layer. Check that the edges are coated with a smooth, glossy finish. The ganache should be set enough that it does not run off the sides excessively when moving the pan.

Final decoration

  1. Final decoration and cooking
Pipe whipped cream rosettes along the top of the cake in neat rows. Place a fresh strawberry half on top of each rosette. If the filling contains raw eggs, ensure the custard base is cooked to 160°F (71°C) before cooling and assembly.
Look for The strawberries should be vibrant and placed securely on the cream.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Use a clean knife when slicing to keep the layers looking sharp and distinct.

The whipped cream rosettes should be uniform in size and height across the cake surface. Verify that each strawberry half is placed securely on the cream. The final product should look polished, with bright colors and distinct, clean layers.

Common mistakes

A common mistake is assembling the cake while the layers are still warm, which causes the filling to melt and the layers to slide.

Another error is using warm ganache, which can thin out the strawberry filling. Always take the time to let the cake layers cool to room temperature or slightly below before starting the assembly process.

How to tell it’s done

The cake is done when the ganache is set to a firm yet spreadable consistency and the overall structure feels stable.

Ensure any egg-based custard filling reaches 160°F (71°C) during the preparation phase. The cake should be chilled for at least one hour before serving to ensure clean slices and perfect layer visibility.

  • Egg dishes: 160°F (71°C) in the thickest part
