Before you start

Before beginning the assembly, ensure the mixing bowl and the beaters of the electric mixer are thoroughly chilled, as this drastically improves the stability and volume of the whipped cream. Gather all ingredients and measure them accurately.

Clear enough space in the refrigerator to accommodate the 8x8 inch baking dish, ensuring it sits on a level surface to prevent the layers from shifting while the pudding sets. If the chocolate chips are large, consider chopping them slightly to ensure they melt evenly in the saucepan.

Ingredients at a glance (5)
  • 1 package crisp tea biscuits
  • 2 cups heavy whipping cream
  • 2 tbsp instant espresso powder
  • 6 oz semisweet chocolate chips
  • 1/4 cup chocolate crunch pearls

Instructions

Whipping the mocha cream

  1. Prepare the mocha cream
In a large chilled bowl, combine the heavy whipping cream and instant espresso powder. Using an electric hand mixer, beat the mixture on medium-high speed until stiff peaks form, ensuring the mocha flavor is evenly incorporated throughout the cream.
Look for The cream holds its shape firmly on the beaters.
Tip Ensure the cream is very cold before whipping to achieve the best volume.

The mocha cream should be thick, smooth, and hold stiff peaks when the beaters are lifted from the bowl. It should have a uniform coffee color and a light, airy consistency that is easy to spread. If the mixture appears too soft or liquid, continue beating for another thirty seconds, but be careful not to overbeat, which can make the cream heavy and dense.

Layering the biscuits

  1. Assemble the layers
Spread a thin layer of the prepared mocha cream on the bottom of the glass baking dish. Arrange a single layer of crisp tea biscuits over the cream. Continue to layer the mocha cream and biscuits until all ingredients are used, finishing with a smooth layer of cream on top.
Look for Layers are uniform and the top is level.
Tip Break biscuits to fill gaps if necessary to create a solid base layer.

The assembly should look neat, with alternating layers of cream and biscuits reaching toward the top of the dish. Each layer of cream should be spread thinly and evenly to ensure the biscuits are fully covered. By the end of this phase, the dish should look uniform, with the final cream layer providing a smooth, flat surface for the ganache topping.

Final setting and finishing

  1. Ganache and final chill
Melt the semisweet chocolate chips in a small saucepan over low heat until smooth. Drizzle the warm ganache evenly over the top of the chilled pudding. Immediately sprinkle with chocolate crunch pearls. Refrigerate the assembled pudding for at least two hours to allow the biscuits to soften and the layers to set.
Look for The ganache is glossy and the pearls are evenly distributed.
Tip Do not overheat the chocolate to avoid splitting the ganache.

After adding the ganache and the crunch pearls, the dish should be placed in the refrigerator. The finish should look professional, with a glossy, even coating of chocolate.

After the required chilling time, the entire dessert should feel firm and stable, ready to be sliced into clean, distinct squares that reveal the beautiful, layered interior of the pudding.

Common mistakes

A common error is rushing the chilling process; if the pudding is served too soon, the biscuits will remain too hard and the layers will not hold together during slicing. Another mistake is over-whipping the cream, which can cause it to turn grainy or separate; stop the mixer as soon as stiff peaks form.

Finally, ensure the ganache has cooled slightly before drizzling it over the cream layer, as pouring hot chocolate directly onto the cold cream can cause the cream to melt and the layers to bleed.

How to tell it’s done

The pudding is considered ready when the entire dish has been chilled for at least two hours, allowing the biscuits to absorb the moisture from the mocha cream.

The top ganache layer should be set and firm to the touch, and the dessert should hold its shape cleanly when sliced with a sharp, warm knife. There is no protein to cook, so internal temperature monitoring is not required for safety, but the texture should be firm throughout the cross-section.
