Before you start

Before beginning, ensure all ingredients are at room temperature to ensure even mixing of the cake batter. Prepare your 6-quart slow cooker by greasing the interior thoroughly.

Have the toasted kataifi and pistachio cream mixture ready to go, as you will want to layer them quickly once the batter is in the slow cooker to keep the consistency correct.

Ingredients at a glance (5)
  • 1 box dark chocolate cake mix, prepared as directed
  • 1 1/2 cups toasted buttered kataifi pastry
  • 1 cup pistachio cream and tahini blend
  • 1 cup dark chocolate chips
  • 1/4 cup roasted pistachios, crushed, for serving

Instructions

Preparing the Cake Base

  1. Prepare the Cake Base
In a large mixing bowl, prepare the dark chocolate cake batter according to the package instructions until smooth. Grease the interior of a 6-quart slow cooker thoroughly with non-stick cooking spray or butter to prevent sticking, ensuring the sides are well-coated for an easy release. Pour the prepared dark chocolate cake batter into the bottom of the slow cooker, spreading it evenly with a spatula to create a uniform base.
Look for The batter should be smooth and evenly distributed across the bottom of the slow cooker insert.
Tip Ensure the slow cooker is properly greased; otherwise, the cake edges may stick during the long cooking process.

The batter should be thick, smooth, and spread evenly across the base of the slow cooker. Ensure the sides are greased to the top of the insert to facilitate an even rise of the cake during the cooking process, avoiding any burnt patches on the sides.

Layering the Filling

  1. Layer the Filling
Combine the toasted buttered kataifi with the pistachio cream and tahini blend in a small bowl until well-incorporated. Carefully spoon this mixture into the center of the chocolate batter, creating a concentrated mound. Do not stir the mixture into the batter, as you want to maintain the distinct layer for the lava effect. Sprinkle the dark chocolate chips over the top of the batter, ensuring they are distributed evenly around the pistachio center.
Look for The pistachio mixture should sit as a distinct layer in the middle of the chocolate cake batter.
Tip Keep the kataifi mixture in the center to ensure it stays surrounded by cake while it cooks.

The pistachio and kataifi mound should be placed directly in the center, surrounded by the chocolate batter.

Ensure the chocolate chips are sprinkled evenly over the top, as they will melt into the cake, adding pockets of richness throughout the final dessert.

Slow Cooking the Lava Cake

  1. Slow Cook and Serve
Cover the slow cooker with the lid and set it to HIGH. Cook for exactly 2 hours and 15 minutes. The cake is done when the edges are set and the center appears slightly molten. Turn off the slow cooker and let the cake rest for 10 minutes to allow the structure to firm up slightly before serving. Scoop portions into bowls, ensuring everyone gets a bit of the molten pistachio kataifi lava, and top each serving with crushed roasted pistachios.
Look for The cake should be risen around the edges with a soft, molten center visible when spooned.
Tip Use a large spoon to serve, making sure to dig down to catch the hidden pistachio lava center.

The cake will smell deeply of chocolate and toasted nuts. The surface should look set around the perimeter. Check that the center has a slight wobble, indicating the molten core is ready to be served warm alongside your favorite vanilla gelato or cream.

Common mistakes

A common mistake is over-mixing the cake batter, which can lead to a tough, rubbery cake rather than a tender one. Another error is failing to toast the kataifi beforehand; raw kataifi will not provide the necessary crunch.

Ensure you do not stir the pistachio filling into the batter, as this will prevent the formation of the distinct lava core.

How to tell it’s done

The cake is done when the outer edges are firm and have risen significantly, while the center remains soft and slightly jiggly.

A toothpick inserted near the edge should come out with a few moist crumbs, but the center should remain molten. Let it rest for 10 minutes before serving to ensure it holds its shape.

Coming up in Part 3: common questions

  • Can this be made in a smaller slow cooker?
  • Why is the kataifi mushy?
  • Can other nuts be used instead of pistachios?
