Before you start
Before beginning assembly, measure out all required ingredients and keep the square glass dish clean and dry on the counter.
Make sure there is flat, level space cleared inside the refrigerator to accommodate the dish without disturbing the unset layers.
Have a flat-bottomed cup or spoon ready for packing the base, an offset spatula accessible for leveling the cream, and the dark chocolate shards chopped and waiting nearby so they can be scattered immediately after pouring.
Ingredients at a glance (4)
- 2 cups chocolate cookie crumbs
- 2 cups whipped cream
- 1 cup melted chocolate
- 1/2 cup dark chocolate shards
Instructions
Crumb foundation
- Establish the crumb baseTransfer the chocolate cookie crumbs directly into the bottom of an 8-inch square glass dish. Use the back of a flat measuring cup or a spoon to press the crumbs firmly into an even, compact layer across the entire base of the dish.Look for The base should look uniformly pressed and completely level across the pan bottom.Tip Press firmly along the corners to establish clean edges for cleanly defined dessert slices.
The crumb base should be firmly compacted and completely level across the entire bottom of the square dish. No loose crumbs should shift when the dish is lightly tilted, providing a sturdy, uniform bedrock for the cream layer.
Cream spreading
- Layer the fluffy creamGently spoon the fluffy whipped cream over the firmly compacted crumb base. Spread the cream with an offset spatula or rubber spatula until it forms a smooth, level layer that seals completely against all four glass edges.Look for The cream layer should be flat and completely cover the crumb layer beneath.Tip Work lightly with the spatula so the loose crumbs beneath do not get pulled into the cream.
The whipped cream layer should sit smoothly and uniformly over the base, completely sealing the edges against the glass. The surface must be flat, airy, and free of visible crumb streaks dragged up by the spatula.
Chocolate topping and set
- Top with chocolate and chillPour the warm melted chocolate evenly over the top of the chilled whipped cream layer, smoothing gently with a spatula. Immediately scatter the dark chocolate shards across the glossy surface. Refrigerate the square glass dish for at least two hours until fully set and chilled.Look for The chocolate sets into a glossy, firm ganache layer topped with crisp, distinct shards.Tip Scatter the shards while the melted chocolate is still fluid so they adhere properly.
The melted chocolate should form an even, glossy sheet across the cream, with the dark chocolate shards evenly distributed over the surface. After chilling, the top looks set, firm, and beautifully textured.
Common mistakes
A common mistake is pouring excessively hot chocolate directly over the whipped cream, which will melt the delicate cream layer beneath and create a muddled layer.
Ensure the melted chocolate is fluid but only gently warm to the touch. Another error is pressing the crumb base too loosely; compact it thoroughly with firm pressure so it holds together as a coherent bottom foundation.
How to tell it’s done
The dessert is completely ready when chilled for at least two hours and the chocolate layer on top is firm to the touch yet glossy.
A spoon or knife inserted vertically should glide cleanly through the firm chocolate top, meet soft resistance through the whipped cream, and lift up the compacted crumb base in one unified, distinct layered scoop.
