Before you start

Before beginning, ensure the sponge cake is at room temperature so it does not crack when rolled. Prepare the whipped cream by beating the heavy cream until stiff peaks form.

Have your parchment paper ready on a flat surface. If the ganache was made ahead, gently reheat it until it is fluid but not hot, as a very hot glaze will melt the whipped cream filling inside the roll.

Ingredients at a glance (3)
  • 1 sheet chocolate sponge cake, pre-baked
  • 1 cup heavy whipping cream, chilled
  • 1/2 cup chocolate ganache, warm

Instructions

Spreading the filling

  1. Filling the cake
Place the pre-baked chocolate sponge cake on a sheet of parchment paper. Spread the whipped heavy cream evenly across the surface of the sponge, leaving a small border at the edges.
Look for The cream is spread into a smooth, even layer.
Tip Keep the sponge at room temperature so it remains flexible for rolling.

The whipped cream should be spread in an even, smooth layer across the sponge, leaving a small margin at the edges to prevent the cream from squeezing out during the rolling process.

Forming the roll

  1. Rolling the cake
Carefully roll the sponge cake tightly starting from one of the shorter ends. Use the parchment paper to assist in maintaining a tight, uniform shape as you roll. If using fresh eggs in the cream, ensure they are cooked to 160°F (71°C) to ensure safety.
Look for The cake forms a tight, cohesive cylinder.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip If the cake cracks slightly, press it gently together as you roll.

The cake should be rolled tightly into a cylinder.

The structure should feel firm and uniform, with the cream distributed evenly throughout the spiral interior of the cake, ensuring the egg-based filling is properly set and stable for slicing.

Glazing the exterior

  1. Glazing and finishing
Place the rolled cake on a cooling rack or clean parchment. Pour the warm chocolate ganache over the top of the roll, allowing it to cascade down the sides for a glossy finish.
Look for The ganache covers the cake in a smooth, shiny layer.
Tip Chill the cake for 30 minutes before slicing to ensure clean cuts.

The ganache should coat the entire top and sides of the roll. The finish should be glossy and smooth, with no gaps in the coverage, indicating that the ganache was the correct consistency.

Common mistakes

A common mistake is rolling the cake when it is too cold or dry, which causes the sponge to crack. Always ensure the cake is at room temperature.

Another error is using whipped cream that has not been whipped to stiff peaks, which will cause the filling to leak out when the cake is sliced and served.

How to tell it’s done

The cake roll is finished once the ganache has been poured and allowed to set slightly. You can check the doneness by gently touching the edge of the ganache; it should feel firm and set to the touch.

The internal structure should be stable enough to hold its shape when sliced with a sharp, warm knife and the eggs must reach 160°F (71°C).

  • Egg dishes: 160°F (71°C) in the thickest part
