Before you start

Ensure all cake layers are completely cooled to room temperature before starting the assembly. If the cakes are still warm, the brigadeiro filling will melt and cause the layers to slide.

Have all your components, including the sprinkles and truffles, ready on your counter to ensure a smooth, uninterrupted process.

Ingredients at a glance (4)
  • 3 layers chocolate cake layers, store-bought or made ahead
  • 3 cups brigadeiro mixture, prepared and cooled
  • 1/2 cup chocolate sprinkles
  • 8 pieces brigadeiro truffles, for serving

Instructions

Base Preparation

  1. Prepare the base
Place the first chocolate cake layer onto a flat serving plate or cake stand. Ensure the surface is stable to prevent the cake from sliding during the assembly process.
Look for The base layer should be completely cool to the touch before adding any filling.
Tip Using a chilled plate helps keep the layers firm during assembly.

The cake layers are level and at room temperature. The serving plate is clean and ready, providing a stable foundation for the first layer to prevent any unwanted movement during the stacking process.

Layering the Filling

  1. Layer the brigadeiro
Spread a generous, even layer of the brigadeiro mixture over the first cake layer using an offset spatula. Repeat the process with the remaining cake layers, stacking them carefully to maintain an even height. Ensure the brigadeiro mixture is cooked until it reaches 160°F (71°C) to ensure the eggs are fully cooked through.
Look for The brigadeiro should reach the edges of the cake without spilling over excessively.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Work quickly to ensure the brigadeiro does not set too much before you finish stacking.

The brigadeiro is spread evenly across each layer, reaching the edges with precision.

Each layer is stacked vertically, and the structure remains upright, indicating that the filling consistency is correct for supporting the weight.

Final Garnish

  1. Finish and garnish
Coat the top and sides of the assembled cake with the remaining brigadeiro. Press the chocolate sprinkles gently onto the sides and top. Finish by placing the brigadeiro truffles on top of the cake before serving.
Look for The surface should look glossy and fully covered in sprinkles.
Tip Chill the finished cake for at least 15 minutes to set the structure before slicing.

The entire cake is coated in a uniform layer of sprinkles, and the truffles are placed symmetrically on top. The cake appears glossy, well-structured, and ready to be chilled before the final service.

Common mistakes

A common mistake is using a brigadeiro filling that is too runny. If the mixture is not cooked long enough, it will not support the weight of the cake layers.

Another error is failing to level the cakes; uneven layers will make the final assembly unstable, leading to a leaning cake that is difficult to serve and present beautifully.

How to tell it’s done

The cake is ready to serve when the brigadeiro has set firmly enough to hold the layers together while remaining soft to the bite.

The total assembly time including chilling should result in a stable cake that can be sliced cleanly without the filling oozing out from between the layers.
