Tips for success
For the best flavor, use bananas that are heavily speckled with brown spots. They should be soft and almost mushy, as they mash easily and provide maximum sweetness.
If you only have underripe bananas, place them in a paper bag with an apple overnight to speed up ripening.
To ensure even baking, position the oven rack in the center. If your loaf pan is dark, you may need to reduce the oven temperature by 25°F to prevent over-browning. Always check for doneness with a toothpick, as oven times can vary.
Variations
- Nutty Banana Bread: Fold in 1/2 cup of toasted walnuts or pecans along with the chocolate chips. The nuts add a wonderful crunch and complement the brown butter's nuttiness.
- Spiced Banana Bread: Add 1 teaspoon of ground cinnamon and 1/4 teaspoon of nutmeg to the dry ingredients. This adds warmth and depth, perfect for fall.
- Banana Muffins: Pour the batter into a 12-cup muffin tin lined with paper liners. Bake at 350°F for 20-25 minutes, or until a toothpick comes out clean. Adjust baking time accordingly.
- Caramel Swirl Banana Bread: Drizzle 1/4 cup of caramel sauce over the batter in the pan and use a knife to create swirls before baking. This adds a sweet, gooey surprise.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature or toast before serving to restore softness.
- Freezer
- Wrap the cooled loaf tightly in plastic wrap and foil, then freeze for up to 3 months.
- Reheat
- Reheat slices in the microwave for 15-20 seconds or in a toaster oven at 350°F for 5 minutes until warm and the chocolate is melty.
Store the banana bread in an airtight container at room temperature for up to 4 days. Wrap it tightly in plastic wrap or foil to keep it moist.
If the weather is warm, you can refrigerate it to extend freshness, but bring it to room temperature before serving for the best texture.
This banana bread can be made up to 2 days ahead. Cool it completely, then wrap it tightly and store at room temperature.
You can also prepare the batter a day ahead and refrigerate it, but bring it to room temperature before baking and add a few extra minutes to the baking time.
Serving ideas
Serve the banana bread warm or at room temperature. For an extra indulgent treat, toast a slice and spread with butter or a drizzle of honey. The melted chocolate chips become gooey and irresistible when the bread is slightly warm.
Pair it with a cup of coffee or tea for a comforting breakfast or afternoon snack.
It also makes a great dessert with a scoop of vanilla ice cream or a dollop of whipped cream. The rich, nutty flavor of the brown butter shines in every bite.

Decadent Brown Butter Chocolate Chip Banana Bread

Ingredients
- 8 tbsp unsalted butter
- 330 g mashed ripe bananas (about 3 large)
- 67 g granulated sugar (1/3 cup)
- 100 g light brown sugar (1/2 cup, packed)
- 1 large egg
- 1 tbsp vanilla bean paste
- 80 g sour cream (1/3 cup)
- 190 g all-purpose flour (1 1/2 cups)
- 1 tsp baking soda
- 1 pinch salt
- 170 g semi-sweet chocolate chips (1 cup)
- 2 tbsp semi-sweet chocolate chips, for topping
Instructions
- Place the butter in a small saucepan over medium heat. Melt, then continue cooking, swirling occasionally, until the butter foams and turns deep amber brown with toasted nutty specks. Remove from heat and let cool slightly.
- In a large bowl, whisk the mashed bananas, cooled brown butter, granulated sugar, brown sugar, egg, vanilla bean paste, and sour cream until smooth and well combined.
- Sprinkle the flour, baking soda, and salt over the wet mixture. Gently fold with a rubber spatula until just combined—some streaks of flour are okay.
- Add the chocolate chips to the batter and fold gently until evenly distributed. Reserve a few chips for topping the loaf.
- Pour the batter into a parchment-lined 9x5-inch loaf pan. Smooth the top with a spatula, then sprinkle the reserved chocolate chips over the surface.
- Bake in a preheated 350°F (175°C) oven for 55 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs and the top is cracked and golden brown.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Cool for at least 20 minutes more before slicing thickly. Serve warm to enjoy the melted chocolate pockets.
