Before you start

Before beginning, ensure your workspace is clean and you have all your ingredients measured and ready. If you are baking the cake layer from scratch, ensure it is fully cooled to room temperature.

Having your offset spatula and serving plate ready will allow you to work efficiently once the ganache is prepared, ensuring the best possible texture for the final presentation.

Ingredients at a glance (3)
  • 1 black velvet cake layer, store-bought or made ahead
  • 1/2 cup chocolate ganache base
  • 2 tbsp dark chocolate chips

Instructions

Ganache Preparation

  1. Prepare the Ganache Base
Place the ganache base in a heat-proof bowl. In a small saucepan, bring the mixture to a gentle simmer over medium heat. Once bubbles appear around the edges, remove from heat immediately. Let it stand undisturbed for two minutes to allow the chocolate to reach a perfect, pourable consistency.
Look for The ganache begins to melt into a glossy, smooth liquid.
Tip Ensure the mixture does not boil over to maintain the correct consistency.

The mixture is brought to a gentle simmer, and the chocolate is perfectly melted into the base. The result is a smooth, homogenous liquid that smells deeply of rich cocoa and is ready for the next stage.

Emulsification

  1. Emulsify the Ganache
Whisk the ganache mixture starting from the center, moving outward in small circles until smooth and glossy. The ganache should be thick yet pourable. Allow the ganache to cool for about 10 minutes, stirring occasionally, until it reaches a spreadable, drip-ready consistency that holds its shape on the cake surface.
Look for The mixture becomes perfectly glossy and smooth.
Tip If the ganache is too thin, let it cool for a few more minutes.

The ganache has cooled to a thick, pourable consistency. It should coat the back of a spoon without running off too quickly, indicating it is ready to be applied to the cake surface.

Final Assembly

  1. Assemble and Decorate
Place the black velvet cake layer on a serving plate. Pour the prepared ganache generously over the top of the cake, using an offset spatula to guide it down the sides for that signature drip effect. Immediately sprinkle the dark chocolate chips over the top while the ganache is still tacky. Let the cake rest for one hour before slicing to allow the ganache to set.
Look for The ganache drips gracefully down the sides of the cake.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Chill the cake briefly if you prefer a firmer ganache finish.

The ganache is evenly distributed over the cake, creating beautiful, slow drips. The chocolate chips are distributed on top, and the cake looks polished, shiny, and ready to set for the final serving stage.

Common mistakes

Avoid overheating the mixture, as boiling it can cause the ganache to become greasy or grainy.

Do not rush the cooling process of the ganache; if it is too warm when applied, it will be too thin and will not create the desired dramatic drip effect.

Finally, ensure the cake is level on the plate to prevent the ganache from pooling unevenly on one side.

How to tell it’s done

The ganache is done when it is completely smooth, glossy, and has thickened enough to cling to the back of a spoon. When applied, it should drip slowly down the sides of the cake without running off entirely.

Allow the cake to rest for at least one hour at room temperature to ensure the ganache sets to the perfect consistency for slicing.

  • Egg dishes: 160°F (71°C) in the thickest part
