Before you start
Start by gathering all equipment and measuring the liquids before beginning the mixing process. Preheat the oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing them thoroughly and lining the bottoms with rounds of parchment paper for effortless removal.
Brew the hot coffee right before mixing so it maintains its heat, and have an offset spatula and a level serving plate ready for assembling the layers.
Ingredients at a glance (3)
- 3 cups dark batter, prepared
- 1 cup hot coffee
- 2 cups dark ganache, slightly warmed
Instructions
Whisking the Batter
- Whisk coffee into batterPlace the prepared dark batter into a large mixing bowl. Slowly pour in the hot coffee while whisking continuously until the mixture is glossy, uniform, and completely smooth.Look for The batter turns glossy, smooth, and evenly fluid without visible streaks.Tip Whisk steadily from the center outward to emulsify the warm liquid cleanly.
The batter should be dark, glossy, and completely smooth. It should have a uniform consistency with no dry pockets of flour or cocoa powder remaining.
If the mixture appears too thick, check the temperature of the coffee to ensure it was sufficiently hot to hydrate the dry ingredients properly.
Baking the Layers
- Bake the sponge layersPour the batter evenly into greased 9-inch pans. Bake at 350°F (175°C) for 30 to 35 minutes until the center springs back. Let the layers cool completely before assembly.Look for The cake tops spring back gently when pressed, and edges pull away slightly.Tip Cool the layers completely on wire racks to prevent the ganache from sliding off.
The layers are finished when they have risen uniformly and the edges have pulled slightly away from the pan. The surface should be firm to the touch. Let the cakes rest in the pans for at least ten minutes before carefully inverting them onto a wire rack to finish cooling completely.
Glazing with Ganache
- Layer and glaze with ganachePlace one deep-black sponge layer on a serving platter and spread a thick layer of dark ganache over the top. Add the second sponge layer, then pour the remaining glossy dark ganache over the top, letting it cascade down the sides.Look for The ganache forms smooth dripping trails down the sides and coats the top evenly.Tip Use an offset spatula to smooth the middle layer evenly to the edges.
The ganache should be perfectly smooth and have a mirror-like shine. It should be thick enough to cling to the cake but fluid enough to drip elegantly down the sides. Check that the ganache has cooled to a spreadable, pourable temperature before applying it to the assembled cake layers.
Common mistakes
A common mistake is attempting to frost or assemble the cake while the sponge layers are still warm. Warm cake layers will quickly melt the dark ganache, causing the filling to slip out and the glaze to run completely off the plate.
Always allow the baked sponges to cool down entirely to room temperature on a wire rack before assembling.
How to tell it’s done
The cake is done baking when a wooden skewer or toothpick inserted into the center of the sponge comes out clean or with a few moist crumbs attached.
The surface of the cake should spring back promptly when lightly touched in the center, and the edges should slightly detach from the sides of the pans.
