Tips for success

To achieve a professional look for your chocolate drizzle, use a small parchment paper cone or a piping bag with the tip snipped off. This allows you to create thin, uniform lines across the cookies rather than large globs. If the melted chocolate is too thick, stir in a tiny drop of neutral oil to thin it out, which also helps the drizzle set with a beautiful, glossy shine.

If you are baking in a humid environment, the shredded coconut might absorb moisture, making the filling seem softer than intended. You can gently toast the shredded coconut in a dry pan over low heat for a few minutes before mixing it with the condensed milk.

This removes excess moisture and intensifies the nutty flavor, ensuring your macaroon center remains perfectly chewy even after several days of storage.

Variations

  • White Chocolate Version: Replace the dark chocolate chip cookie dough with a white chocolate macadamia nut base. The sweetness of the white chocolate pairs wonderfully with the coconut center, creating a lighter, more delicate flavor profile.
  • Almond Infusion: Add a few drops of almond extract to the coconut filling and top each cookie with a single toasted almond slice. This mimics the classic flavor combination of a popular coconut candy bar.

Storage and make-ahead

Fridge
Store in an airtight container for up to one week to maintain optimal quality.
Freezer
Freeze for up to three months in a sealed freezer-safe bag or container.
Reheat
Warm in a 300°F oven for 3-5 minutes or until the chocolate is just softened.

Store the cookies in an airtight container at room temperature for up to three days. Place a sheet of parchment paper between layers if you are stacking them to prevent the chocolate drizzle from sticking to the bottom of the cookies above. Keep the container in a cool, dark place away from direct sunlight or heat sources to maintain the texture of the chocolate and the freshness of the coconut filling.

You can prepare the coconut filling balls up to two days in advance and keep them in the refrigerator, covered. The cookie dough can also be made ahead and stored in the fridge.

When ready to bake, let the dough sit at room temperature for a short time to become workable. This makes the final assembly step very quick, allowing you to have fresh, warm cookies in just over 10 minutes of active baking time.

Serving ideas

These cookies are best served at room temperature, which allows the flavors of the dark chocolate and the coconut to fully develop. They pair exceptionally well with a glass of cold milk or a cup of unsweetened coffee, which cuts through the richness of the chocolate.

For a more formal presentation, arrange them on a tiered platter with fresh berries, which provide a tart contrast to the dense, sweet nature of the cookies.

If serving as part of a dessert buffet, consider placing them near lighter fruit-based desserts to balance the palate. Because they are quite decadent, one cookie per person is usually sufficient.

If you want to elevate the presentation, you can lightly dust the plate with a tiny amount of cocoa powder or serve with a side of lightly whipped, unsweetened cream to complement the texture of the coconut center.

Frequently asked questions

Can these cookies be made gluten-free?
Yes, you can substitute the standard flour in your cookie dough with a high-quality gluten-free all-purpose flour blend. Ensure that your chocolate chips and other ingredients are also certified gluten-free to accommodate those with sensitivities.
Why is it important to use Dutch-process cocoa?
Dutch-process cocoa is treated with an alkali to neutralize its acidity. This results in a darker color and a smoother, more mellow chocolate flavor compared to natural cocoa powder, which is essential for the deep, rich profile of these cookies.
Can the coconut filling be made without condensed milk?
While sweetened condensed milk is key to the texture and sweetness of the macaroon center, you can experiment with a thick coconut cream and honey mixture. Note that this will change the final texture and level of sweetness significantly.

Ingredients

  • 1 cup shredded coconut
  • 1/3 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 2 cups Dutch-process dark chocolate chip cookie dough, prepared
  • 1/3 cup toasted coconut flakes
  • 2 tbsp melted dark chocolate

Instructions

  1. In a small bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Stir the mixture thoroughly until the coconut is evenly coated and the mixture holds its shape. Form the coconut mixture into twelve small, uniform balls and set them aside on a plate until ready for assembly.
  2. Preheat the oven to 350°F (175°C). Take a portion of the dark chocolate cookie dough and flatten it in your palm. Place one coconut ball in the center and wrap the dough completely around it, sealing the edges. Roll the tops of the dough balls in toasted coconut flakes. Arrange the cookies on a parchment-lined baking sheet and bake for 11 minutes or until the coconut tips turn golden brown.
  3. Remove the baking sheet from the oven and let the cookies rest on the pan for 10 minutes to firm up. Once slightly cooled, drizzle the melted dark chocolate over the toasted coconut crowns of each cookie. Allow the chocolate to set briefly before serving to ensure the best texture and appearance.
