- 1 lb ground beef
- 1/2 cup uncooked white rice
- 1 medium onion, finely chopped

- 1 tsp sweet paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups beef broth
- 1 cup plain yogurt
- 1 clove garlic, minced
Instructions
Prepare and Fill
- Prepare the Cabbage LeavesBring a large pot of salted water to a boil. Carefully add the cabbage leaves and blanch for 2 to 3 minutes, until pliable and translucent. Remove with tongs and drain; pat dry with paper towels. Trim the thickest part of the central rib from each leaf so they bend easily.Look for Leaves are soft, translucent, and flexible without tearing.Tip Keep the leaves warm under a damp towel while working to prevent drying.
- Make the FillingIn a mixing bowl, combine the ground beef, uncooked rice, finely chopped onion, tomato paste, paprika, salt, and black pepper. Mix with your hands until evenly combined. The mixture should be moist and cohesive.Look for Filling holds together when pressed; no dry spots remain.Tip Wetting your hands lightly prevents the meat mixture from sticking.
- Line the CupsLightly oil six 6-ounce ramekins or small oven-safe bowls. Line each cup with a blanched cabbage leaf, letting the edges overhang. Press the leaf against the sides so it forms a cup shape. Use two smaller leaves if one is not large enough to cover the interior.Look for Cabbage leaf covers the interior of the cup with overhang for folding.Tip Overlap leaves slightly to avoid gaps where filling could leak.
- Fill the CupsDivide the filling evenly among the prepared cups, pressing it firmly into the center. Fold the overhanging cabbage leaves over the filling to enclose it completely. Press down gently to compact the dome.Look for Filling is packed tightly; cabbage covers it fully.Tip Packing firmly helps the rolls hold their shape during baking.
The cabbage leaves are soft and translucent, and the filling is well combined and slightly sticky.
The cups are neatly lined with overhanging leaves, and the filling is packed firmly, with the leaves folded over to enclose it completely. The assembled cups look tidy and ready for the oven.
Bake and Caramelize
- Add the BrothPlace the filled cups in a baking dish. Pour the beef broth around the cups, not directly over the cabbage domes, until it comes about halfway up the sides. The broth will create steam and keep the rolls moist while baking.Look for Broth surrounds the cups but does not submerge the cabbage tops.Tip If the broth reduces too much, add a splash of hot water during baking.
- Bake the RollsCover the baking dish with foil and bake at 375°F (190°C) for 45 minutes, until the filling is cooked through and the cabbage tops are caramelized. Remove the foil for the last 10 minutes to brown the domes.Look for Cabbage tops are golden and caramelized; filling is firm and steaming.Safe temperature 160°F (71°C) internal temperature (ground meat)Tip Basting the domes with broth halfway through keeps them tender.
After 45 minutes, the cabbage tops are golden brown and caramelized, and the broth is bubbling around the cups. The filling is firm and cooked through, and the kitchen smells richly savory. The rolls hold their shape when gently nudged.
Plate and Serve
- Make the Garlic YogurtIn a small bowl, stir the minced garlic into the plain yogurt. Season with a pinch of salt if desired. Chill in the refrigerator while the cabbage rolls bake.Look for Yogurt is smooth and fragrant with garlic.Tip Use full-fat yogurt for a creamier texture that balances the spices.
- Plate and ServeSpoon a generous layer of chilled garlic yogurt onto each serving plate. Carefully unmold each cabbage dome by running a knife around the edge and inverting onto the yogurt. Slice the dome open with a chef knife to reveal the steaming filling.Look for Cabbage dome holds its shape; filling is steaming and fragrant.Tip Use a wide spatula to transfer the domes without breaking them.
The garlic yogurt is chilled and creamy. The unmolded cabbage domes sit proudly on the yogurt, and slicing one open reveals a steaming, fragrant filling. The contrast of warm dome and cool yogurt is visually appealing and ready to serve.
Common mistakes
A common mistake is not blanching the cabbage long enough, which makes the leaves brittle and difficult to mold. Another is overfilling the cups, causing the filling to spill during baking.
Press the filling firmly but leave a little room for expansion. Also, avoid pouring the broth directly over the domes, as it can wash away the caramelization; pour it around the cups instead.
How to tell it’s done
The rolls are done when the cabbage tops are deep golden and caramelized, and the filling is cooked through. To check, insert an instant-read thermometer into the center of a roll; it should read at least 160°F (71°C).
The broth should be bubbling and slightly reduced. Let the rolls rest for 5 minutes before unmolding to allow the filling to set.
- Ground meat: 160°F (71°C) in the thickest part
