Tips for success
For the ultimate crunch, use a wire rack placed over a baking sheet to hold the fried chicken. This allows air to circulate around the crust, keeping it crisp instead of steaming on a plate.
If you're making multiple sandwiches, keep the fried chicken warm in a low oven (200°F) while you fry the rest.
To control the heat, adjust the amount of cayenne in the brine and the hot oil. For a milder version, reduce the cayenne in the brine and use less hot oil.
For extra heat, add a pinch of cayenne to the comeback sauce or sprinkle on extra pepper flakes before serving.
Variations
- Milder Version: Reduce the cayenne in the brine to 1 teaspoon and use a mild hot sauce in the oil coating. You can also skip the hot oil and just brush with melted butter for a classic fried chicken sandwich.
- Spicy Honey Glaze: After coating with hot oil, drizzle with a mixture of honey and cayenne for a sweet-heat finish. This adds a sticky glaze that contrasts with the crunchy crust.
- Grilled Version: Skip the frying and grill the brined chicken over medium-high heat for 6-8 minutes per side, until cooked through. Brush with hot oil during the last minute of grilling for a smoky twist.
- Slaw Swap: Use a crunchy cabbage slaw with a simple vinegar dressing instead of creamy coleslaw for a lighter, tangier topping. Add shredded carrots or red cabbage for color.
Storage and make-ahead
- Fridge
- Store leftover fried chicken and sauce separately in airtight containers in the refrigerator for up to 3 days.
- Freezer
- Freeze the fried chicken in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months. Reheat in a 375°F oven until hot and crisp.
- Reheat
- Reheat fried chicken in a 350°F oven for 10-15 minutes, or until heated through and the crust is crisp again. Avoid microwaving, which makes the crust soggy.
Leftover fried chicken can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place on a baking sheet and warm in a 350°F oven for 10-15 minutes, or until heated through and crisp.
The sandwich components are best assembled fresh, but the fried chicken can be reheated separately.
You can brine the chicken up to 4 hours ahead and prepare the dredge in advance. The comeback sauce and coleslaw can be made a day ahead and stored in the refrigerator. Fry the chicken just before serving for the best crunch.
Serving ideas
Serve the sandwich hot, straight from the skillet, with extra pickles on the side. The combination of spicy chicken, cool coleslaw, and tangy pickles is a party in your mouth. Pair with crispy fries or a simple green salad to round out the meal.
For a truly decadent experience, serve the sandwich with a side of comeback sauce for dipping.
The sauce's creamy, tangy flavor is the perfect counterpoint to the fiery chicken. Don't forget plenty of napkins—this sandwich is messy in the best way.

Crunchy Nashville Hot Chicken Sandwich with Comeback Sauce

Ingredients
- 4 boneless, skinless chicken breasts, pounded to even thickness
- 2 cups buttermilk
- 1/2 cup pickle juice
- 1 tbsp cayenne pepper
- 2 cups all-purpose flour
- 1/4 cup cornstarch
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp kosher salt
- 1 tsp black pepper
- 4 brioche buns, split
- 1/2 cup comeback sauce (store-bought or homemade)
- 1 cup thick dill pickle chips
- 2 cups creamy vinegar coleslaw
- 3 cups vegetable oil, for frying
- 1/2 cup hot chicken oil (spicy oil from frying, or a mixture of oil and cayenne)
Instructions
- In a large bowl, whisk together the buttermilk, pickle juice, and cayenne pepper. Add the pounded chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- In a shallow dish, whisk together the all-purpose flour, cornstarch, paprika, garlic powder, kosher salt, and black pepper. The cornstarch helps create craggy, crispy flakes.
- Remove the chicken from the brine, letting any excess drip off. Dredge each piece thoroughly in the flour mixture, pressing firmly to adhere. Shake off any excess and place on a wire rack.
- In a deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C) on a deep-fry thermometer. Maintain this temperature throughout frying.
- Carefully place the dredged chicken in the hot oil, working in batches to avoid crowding. Fry for 5-6 minutes per side, until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
- While the chicken is still hot, brush or drizzle with the hot chicken oil (spicy oil from frying or a mixture of oil and cayenne). This gives the sandwich its signature fiery kick.
- Toast the split brioche buns in a dry skillet or under the broiler until golden brown and lightly crisp.
- Spread the comeback sauce on the bottom half of each toasted bun. Layer with thick dill pickle chips, the hot chicken cutlet, and a generous pile of creamy vinegar coleslaw. Top with the other half of the bun.
