Tips for success
For the best cheese pull, use freshly shredded mozzarella rather than pre-shredded, which often contains anti-caking agents that prevent smooth melting. Shred it yourself from a block for a gooey, stretchy texture. Also, make sure the baguette is fresh; a stale baguette may crumble when you slice it.
If you prefer a spicier kick, add a pinch of cayenne pepper to the marinade or a drizzle of hot sauce over the finished baguette.
For a milder version, reduce the chili powder and use sweet paprika instead of smoked. You can also add a handful of fresh cilantro before serving for a burst of color and freshness.
Variations
- Spicy chorizo version: Swap the chicken for 1 lb of fresh chorizo, crumbled and cooked until browned. Skip the marinade and use the same sauce. The chorizo adds a smoky, spicy flavor that pairs well with the creamy sauce and cheese.
- Vegetarian paneer: Replace the chicken with 1 lb of paneer, cut into cubes and pan-fried until golden. Marinate the paneer in the same spices (without yogurt) for 15 minutes. Cook in the sauce for 5 minutes. The paneer holds its shape and absorbs the sauce beautifully.
- Mild tikka masala: Reduce the chili powder to 1/2 tsp and add 1 tbsp of garam masala for a milder, more aromatic flavor. Use Greek yogurt in the marinade and add a tablespoon of tomato paste to the sauce for extra depth.
- BBQ chicken version: Skip the Indian spices and marinate the chicken in 1/2 cup of BBQ sauce. Sear and simmer with the tomato puree and cream for a smoky, tangy sauce. Top with cheddar instead of mozzarella for a BBQ twist.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a toaster oven or under the broiler to restore crispness.
- Freezer
- Not recommended for freezing; the bread becomes soggy and the cheese loses its texture. Make fresh for best results.
- Reheat
- Reheat in a toaster oven or under the broiler for 3-5 minutes until hot and the cheese is bubbly again.
Store any leftover loaded baguette in an airtight container in the refrigerator for up to 3 days. The bread will soften slightly, but the flavors will meld.
To reheat, place it in a toaster oven or under the broiler for a few minutes to crisp the crust and melt the cheese again. Microwave is not recommended as it will make the bread soggy.
The butter chicken can be made up to 2 days ahead and stored in the refrigerator. When ready to assemble, reheat the chicken in a skillet until hot, then load the baguette and broil as directed.
You can also assemble the entire baguette (without broiling) a few hours ahead, cover, and refrigerate. Broil just before serving.
Serving ideas
Serve the loaded baguette as a main course with a simple green salad or roasted vegetables on the side. The rich, creamy chicken and crunchy bread pair well with a crisp, acidic salad to balance the richness. Cut the baguette into thick batons for a shareable appetizer at a party.
For a fun presentation, place the whole baguette on a wooden board and let everyone pull apart their own piece. Provide plenty of napkins, as the cheese and sauce can be messy.
This dish is best enjoyed immediately after broiling, when the cheese is at its stretchiest and the bread is at its crunchiest.

Crunchy Butter Chicken Cheese Pull-Apart Baguette

Ingredients
- 1 lb diced chicken breast
- 2 tbsp Greek yogurt
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- 1 tsp garam masala
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp ground turmeric
- salt to taste
- 2 tbsp oil
- 2 tbsp butter
- 1/2 cup tomato puree
- 1/2 cup heavy cream
- 1 tsp kasoori methi (dried fenugreek leaves)
- 1 baguette
- 2 cups shredded mozzarella cheese
Instructions
- In a bowl, combine the diced chicken with the Greek yogurt, lemon juice, smoked paprika, garam masala, chili powder, cumin, turmeric, and salt. Stir until every piece is coated. Refrigerate while you prepare the other ingredients, at least 15 minutes or up to overnight.
- Heat the oil in a large skillet over medium-high heat. Add the marinated chicken in a single layer. Sear without stirring for 2–3 minutes until a deep golden crust forms. Flip and sear the other side for another 2–3 minutes. The chicken should be charred in spots and cooked through to 165°F (74°C).
- Reduce the heat to medium. Add the butter to the skillet and let it melt. Stir in the tomato puree and heavy cream. Sprinkle in the kasoori methi and stir to combine. Simmer gently for 3–4 minutes until the sauce thickens slightly and turns a rich orange color.
- Return the seared chicken to the skillet with the sauce. Stir to coat every piece. Let it simmer for 2 minutes so the chicken absorbs the sauce. The mixture should be thick enough to mound on a spoon.
- Position an oven rack about 6 inches from the broiler element. Turn the broiler to high. Place a baguette on a broiler-safe baking sheet. Cut a deep slit lengthwise down the center, but do not cut all the way through.
- Generously spoon the butter chicken mixture into the slit of the baguette, piling it high. Use a spatula to push the filling down gently. Make sure the chicken is distributed evenly from end to end.
- Sprinkle the shredded mozzarella evenly over the top of the butter chicken, covering the entire surface. Press the cheese lightly so it sticks to the sauce.
- Place the baking sheet under the broiler. Broil for 3 minutes until the cheese is melted, bubbling, and blistered in spots. Watch carefully to prevent burning. The cheese should be golden-brown in places and the baguette crust should be crunchy.
- Let the loaded baguette rest for 2 minutes. Use a serrated knife to slice it into thick batons, cutting through the crunchy crust. Pull the pieces apart to reveal the stretchy cheese pull. Serve warm.
