Tips for success
For a thicker gravy, you can whisk a tablespoon of cornstarch with two tablespoons of cold water to create a slurry. After the roast is done, stir this mixture into the hot juices in the slow cooker and let it cook on high for an additional 10 to 15 minutes until the sauce reaches your desired consistency.
If you prefer a deeper flavor, you can sear the chuck roast in a hot skillet with a little oil before placing it into the slow cooker.
While this is an optional step, it adds a layer of caramelized flavor to the exterior of the meat. If you choose to do this, ensure you deglaze the skillet with a splash of broth and add those drippings to the cooker.
Variations
- Spicy Italian Roast: Add a teaspoon of crushed red pepper flakes or a few drained pepperoncini peppers to the slow cooker along with the broth for a zesty, spicy kick that complements the Italian seasoning perfectly.
- Root Vegetable Medley: In addition to baby carrots, add peeled and cubed potatoes or parsnips to the cooker. These root vegetables will soak up the savory juices and make the dish even more substantial.
Storage and make-ahead
- Fridge
- Keep leftovers in an airtight container for up to 3 days. Ensure the food cools to room temperature within 2 hours before placing it in the refrigerator.
- Freezer
- Freeze the cooked roast in a freezer-safe bag or container for up to 2 months. Thaw overnight in the refrigerator before reheating gently on the stovetop.
- Reheat
- Reheat in a saucepan over medium-low heat with a splash of broth, or in the microwave until heated through, stirring occasionally to ensure even temperature.
Store any leftovers in an airtight container in the refrigerator. To keep the meat from drying out, store it submerged in some of the cooking juices. Properly stored, the roast will stay fresh for up to three days. When reheating, add a small splash of water or broth to the container to help maintain the moisture of the beef.
This dish is perfect for making ahead as the flavors often deepen after sitting in the refrigerator overnight.
You can assemble the ingredients in the slow cooker insert the night before, cover it, and keep it in the refrigerator. In the morning, simply place the insert into the base and turn it on to begin the cooking process.
Serving ideas
Serve the roast hot, either sliced into thick slabs or shredded into smaller pieces. Spoon the rich, herb-infused gravy generously over the meat and carrots to enhance the flavor.
This dish pairs beautifully with simple sides that can absorb the extra sauce, such as mashed potatoes, crusty bread, or even buttered egg noodles for a classic comfort food experience.
Consider serving the meal directly from the slow cooker if you are hosting a casual gathering, as it keeps the food warm for an extended period.
Arrange the carrots alongside the meat on a platter if you prefer a more plated look, or simply serve in shallow bowls to ensure everyone gets plenty of the flavorful broth. Garnish with fresh herbs if you have them on hand.
