Tips for success
For the best flavor, use full-fat sour cream and a good-quality Swiss cheese. Pre-shredded cheese often contains anti-caking agents that can affect melting, so shred your own for a silkier sauce.
If you have time, sauté the cauliflower in a little butter before adding it to the slow cooker—it adds a nutty depth, but it’s not necessary.
This recipe is forgiving: you can swap the cream of broccoli soup for cream of chicken or mushroom, and add a pinch of garlic powder or smoked paprika for extra flavor.
If you like a bit of heat, stir in a dash of hot sauce before serving. Leftovers taste even better the next day, so don’t be afraid to make a double batch.
Variations
- Broccoli Cheddar Chicken: Swap the cauliflower for broccoli florets and use sharp cheddar instead of Swiss. Add the broccoli during the last hour of cooking to keep it bright green and crisp-tender. Serve over rice or pasta.
- Mushroom Swiss Chicken: Replace the cream of broccoli soup with cream of mushroom soup. Add 8 oz of sliced cremini mushrooms with the chicken. Use Swiss cheese and finish with a sprinkle of fresh thyme.
- Spicy Southwestern Chicken: Add a can of diced green chiles and a teaspoon of chili powder. Use pepper jack cheese instead of Swiss. Serve with warm tortillas, avocado, and a squeeze of lime.
- Bacon Ranch Chicken: Stir in 1/2 cup of ranch dressing and top with crumbled cooked bacon. Use cheddar or Monterey Jack cheese. Serve over baked potatoes with extra bacon on top.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 3 days.
- Freezer
- Freeze the cooked dish in a freezer-safe container for up to 3 months.
- Reheat
- Reheat individual portions in the microwave for 2–3 minutes, stirring halfway.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; when reheating, add a splash of chicken broth or milk to loosen it to the desired consistency.
You can assemble the raw ingredients in the slow cooker insert, cover, and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the chilled ingredients. This makes it a true set-and-forget meal for busy days.
Serving ideas
Serve this creamy chicken and cauliflower over mashed potatoes, egg noodles, or rice to soak up the luscious sauce.
A side of steamed green beans or a simple green salad adds a fresh contrast. For a low-carb option, omit the starch and enjoy the dish on its own or over cauliflower rice.
Garnish with a sprinkle of fresh chopped parsley or chives for a pop of color, if you like. The dish is rich and satisfying on its own, so keep sides simple. A glass of crisp white wine, like a Sauvignon Blanc, pairs nicely with the creamy, cheesy flavors.

Crockpot Swiss Chicken and Cauliflower with Creamy Sauce

Ingredients
- 2 lb boneless skinless chicken thighs
- 1 head cauliflower, cut into florets
- 1 can (10.5 oz) condensed cream of broccoli soup
- 1/2 cup sour cream
- 1 1/2 cups shredded Swiss cheese
Instructions
- Place the chicken thighs in an even layer in the bottom of a 6-quart or larger slow cooker. Scatter the cauliflower florets over and around the chicken. Spoon the condensed cream of broccoli soup over the top, spreading it slightly to cover some of the chicken and cauliflower.
- Dollop the sour cream over the top of the soup, then sprinkle the shredded Swiss cheese evenly over everything. Cover the slow cooker with the lid.
- Cook on low for 4 to 5 hours, or until the chicken is tender and reaches an internal temperature of 165°F (74°C). The cauliflower should be fork-tender, and the sauce will be bubbly and thickened.
- Once cooked, use two forks to shred the chicken thighs directly in the slow cooker. Stir the shredded chicken and cauliflower into the sauce until everything is coated.
- Serve the chicken and cauliflower mixture over creamy mashed potatoes, if desired. Spoon the extra sauce over each serving.
