Tips for success
For the best texture, make sure the beef is well-shredded and not in large chunks. This helps it distribute evenly and soak into the corn cake as it cooks. If your beef is dry, add a few tablespoons of water or beef broth to the slow cooker before layering.
Also, let the dish rest for 10 minutes after cooking – this allows the corn cake to firm up slightly, making it easier to serve. When scooping, use a wide spoon and go straight down to get both layers in every serving.
The toppings are non-negotiable for the full experience. The cool, creamy avocado and sour cream cut through the richness, while the cilantro adds freshness and the lime brightens everything. You can also add pickled jalapeños for extra heat.
If you're serving a crowd, set out the toppings in small bowls so everyone can customize their plate. This dish is also great for meal prep – it reheats well, and the flavors deepen overnight.
Variations
- Chicken Fiesta Bake: Swap the shredded beef for an equal amount of cooked, shredded chicken tossed in red enchilada sauce. The chicken will absorb the sweet corn flavor beautifully. Cook time stays the same.
- Vegetarian Tamalito Bake: Omit the beef and double the black beans, adding a can of diced green chiles for extra flavor. Use vegetable broth to moisten the beans. The corn cake will be the star.
- Spicy Chorizo Version: Replace the beef with cooked, crumbled Mexican chorizo. The spicy, fatty chorizo pairs wonderfully with the sweet corn cake. Reduce the salt in the batter, as chorizo is salty.
- Cheesy Corn Cake Only: Make this as a side dish by layering the corn batter directly in the slow cooker without the beef. Cook on HIGH for 2 1/2 to 3 hours, then top with cheese and serve as a sweet-savory side.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop until hot throughout.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 2-3 minutes, or in a skillet over medium heat, stirring occasionally, until hot and bubbling.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The corn cake will absorb some moisture from the beef, so it may become softer, but it will still be delicious. Reheat individual portions in the microwave or in a skillet over medium heat until warmed through. If reheating the whole dish, cover with foil and warm in a 350°F (175°C) oven for about 20 minutes.
You can assemble the entire dish (without the cheese) up to 24 hours in advance. Cover and refrigerate the slow cooker insert, then add the cheese and cook on HIGH for 3 hours and 15 minutes when ready.
You may need to add 15-20 minutes to the cooking time since the dish starts cold. Alternatively, prepare the beef and black beans ahead of time, and store them separately. Make the corn batter fresh when you're ready to cook.
Serving ideas
Serve the fiesta bake straight from the slow cooker for a casual, family-style meal. Place the slow cooker on a trivet in the center of the table and let everyone scoop their own portion. Offer a spread of toppings – avocado slices, sour cream, cilantro, lime wedges, and maybe some hot sauce for those who like extra heat. A simple green salad or Mexican rice would round out the meal nicely.
For a more polished presentation, scoop the bake onto individual plates, making sure each serving has a nice cross-section of the layers. Garnish with a few extra cilantro leaves and a lime wedge on the side.
This dish is hearty enough to stand alone, but it's also great with warm tortillas or tortilla chips for scooping. It's a versatile meal that works for weeknight dinners, potlucks, or any gathering where you want to impress without fuss.

Crockpot Sweet Corn Tamalito & Shredded Beef Fiesta Bake

Ingredients
- 2 lb cooked red-chile shredded beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 1/2 cups masa harina
- 1 can (14.75 oz) creamed corn
- 1 cup frozen or canned corn kernels, drained
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup whole milk
- 1 1/2 cups shredded Monterey Jack cheese
- 1/2 cup crumbled cotija cheese
- 1 avocado, sliced
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Spread the cooked red-chile shredded beef evenly across the bottom of a 6-quart slow cooker. Scatter the drained black beans over the beef and lightly press them into the meat so they create an even layer.
- In a large bowl, whisk together the masa harina, sugar, baking powder, and salt. Add the creamed corn, corn kernels, melted butter, and milk. Stir until a thick, spoonable batter forms, with no dry streaks.
- Spoon the sweet corn batter over the beef and beans. Use a rubber spatula to spread it evenly to the edges, completely covering the meat. The batter should be about 1 inch thick.
- Cover the slow cooker and cook on HIGH for 3 hours, without opening the lid during the first 2 hours. The corn cake is done when it is set in the center and a toothpick inserted into the cake comes out mostly clean.
- Once the corn cake is set, sprinkle the shredded Monterey Jack cheese evenly over the top, followed by the crumbled cotija. Cover and cook on HIGH for an additional 15 minutes, until the cheese is melted and bubbly.
- Turn off the slow cooker and let the dish rest for 10 minutes. This allows the layers to set slightly for cleaner serving. Scoop portions onto plates and top with avocado slices, a dollop of sour cream, fresh cilantro, and a squeeze of lime.
