Before you start

Before beginning, ensure your slow cooker insert is clean and dry. Have all your ingredients measured and ready to go. Brown the Italian sausage in a separate skillet and drain it well on paper towels to remove excess grease, which prevents the dip from becoming oily during the slow cooking process.

Shred your mozzarella freshly if using a block, and have your garlic breadsticks warmed or toasted just before the dip finishes cooking to ensure everything is hot and ready at the same time.

Ingredients at a glance (8)
  • 16 oz Italian herb cream cheese
  • 1 lb Italian sausage, browned
  • 2 cups rich pizza marinara
  • 3 cups whole-milk mozzarella, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 cup cup-and-char pepperoni
  • Fresh basil for serving
  • Garlic breadsticks for serving

Instructions

Meat Preparation

  1. Prepare the Meat
Place the Italian sausage in a skillet over medium-high heat. Cook thoroughly, breaking it apart with a spatula, until the meat is browned and reaches an internal temperature of 160°F (71°C). Drain any excess fat thoroughly before adding to the slow cooker.
Look for The sausage should be fully browned and no longer pink.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the sausage is broken into small, uniform crumbles for the best texture in the dip.

The sausage should be browned and crumbly, having reached an internal temperature of 160°F (71°C). It must be thoroughly drained of all excess fat to ensure the final dip has the right consistency.

The meat should be cooled slightly before layering to prevent it from immediately melting the cream cheese.

Layering the Dip

  1. Layer the Dip
Add the Italian herb cream cheese to the bottom of the slow cooker. Layer the browned sausage, pizza marinara, shredded whole-milk mozzarella, grated Parmesan, and cup-and-char pepperoni on top of the cream cheese base.
Look for Layer the ingredients evenly to ensure consistent melting.
Tip Using whole-milk mozzarella ensures a better melt and stretch compared to part-skim varieties.

Ensure the cream cheese is spread evenly across the bottom of the slow cooker to act as a stable base. Layer the remaining ingredients carefully to avoid splashing the sides of the pot. A uniform layer of cheese on top helps create an even, golden crust once the cooking process is complete.

Slow Cooking

  1. Cook and Serve
Cover the slow cooker and cook on HIGH for 90 minutes. The dip is ready when the cheese is bubbling and golden, and the pepperoni cups glisten with oil. Garnish with fresh basil before serving with warm garlic breadsticks.
Look for Watch for the cheese to be completely melted and bubbling around the edges.
Tip If the dip is too thick, stir in a tablespoon of warm water or marinara to reach the desired consistency.

The dip is ready when the cheese is bubbling vigorously and the pepperoni has developed a characteristic crispness. The aromas of garlic, herbs, and savory sausage should be prominent. If the edges are browning too quickly, check that the slow cooker is on the correct high heat setting.

Common mistakes

Avoid skipping the step of draining the browned sausage, as excess fat will pool on top of the dip and create an unappealing texture. Do not over-mix the layers before cooking; the slow cooker will naturally combine the ingredients as they heat up.

Finally, do not leave the lid off for too long during the cooking process, as this allows too much heat to escape and will significantly increase the time required for the cheese to melt properly.

How to tell it’s done

The dip is considered done when the mozzarella is fully melted, bubbling, and slightly golden around the edges of the ceramic insert. The pepperoni slices should be glistening with their rendered oils and slightly curled at the edges, creating the classic cup-and-char appearance.

The internal temperature of the dip should be hot throughout, and it should hold its heat well when served directly from the slow cooker.

  • Ground meat: 160°F (71°C) in the thickest part
