Tips for success

For an extra layer of flavor, consider lightly toasting the brioche cubes in a dry pan before layering them in the Crockpot. This adds a subtle nutty note and helps the bread maintain its shape better during the long, slow cook.

Additionally, you can add a pinch of cinnamon or nutmeg to the custard mixture if you prefer a more spiced profile, though the vanilla bean paste provides a beautiful, classic floral aroma that complements the strawberries perfectly.

If you find that your slow cooker tends to run hot, you can place a folded kitchen towel between the lid and the pot during the last 30 minutes of cooking. This helps absorb excess condensation, preventing the top of the bake from becoming too soggy and ensuring a more uniform texture throughout.

Remember that every slow cooker model varies in performance, so the first time you make this, keep a close watch toward the end of the cooking time to ensure the perfect result.

Variations

  • Mixed Berry Bake: Replace the strawberries with a mix of blueberries, raspberries, and blackberries. The varied acidity of the mixed berries provides a deeper flavor profile that pairs wonderfully with the sweet brioche and rich cream cheese.
  • Chocolate Brioche Bake: Add a half cup of high-quality dark chocolate chips to the layers. The chocolate melts into the custard and pairs beautifully with the strawberries, creating a more dessert-like breakfast experience that feels truly indulgent.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Ensure the dish has cooled for at most 2 hours before refrigeration.
Freezer
Not recommended, as the texture of the bread and custard will become compromised upon thawing and reheating.
Reheat
Reheat individual portions in the microwave until warmed through, or place in a 325°F oven covered with foil until heated.

If you have leftovers, allow the casserole to cool completely at room temperature for no more than 2 hours before transferring it to an airtight container. It will keep well in the refrigerator for up to 3 days.

To maintain the best texture, avoid storing it with the whipped cream already applied, as this will melt and make the bread soggy. Keep the toppings separate and add them fresh at the time of service for the best experience.

You can prepare the entire assembly the night before and store the covered Crockpot insert in the refrigerator. In the morning, simply place the insert into the slow cooker base and start the cooking process.

Note that if the ingredients are cold from the refrigerator, you may need to add an extra 30 minutes to the total cooking time to ensure the center reaches the required temperature. This is an excellent method for stress-free holiday or weekend brunches where you want a hot breakfast without the morning work.

Serving ideas

Serve this dish warm, ideally directly from the Crockpot to maintain its temperature. Use a large spoon to scoop out generous portions, ensuring each serving gets a good mix of the strawberries, creamy cheese, and soft brioche. The beauty of this recipe is its rustic presentation, so don't worry about perfect slices; it is meant to be enjoyed in comforting, scoopable portions that highlight the contrast between the textures.

To elevate the presentation, place a dollop of freshly whipped cream right in the center of each serving and drizzle with a little extra strawberry glaze or fresh fruit syrup. A few fresh mint leaves can also add a pop of color and a refreshing finish to the plate. Because the bake is quite rich, consider serving it alongside a cup of strong, black coffee or a crisp, tart fruit salad to balance the sweetness of the meal.

Frequently asked questions

Can this be made without cream cheese?
Yes, the cream cheese can be omitted if preferred. While it adds a lovely tang and creamy texture, the custard and brioche will still produce a delicious, rich breakfast bake on their own.
Why does the center of the bake seem soft?
The nature of a slow cooker casserole is to be soft and pudding-like in the center. As long as the internal temperature has reached 160°F (71°C), it is safely cooked and ready to serve.
Is it possible to use frozen strawberries?
Fresh strawberries are recommended for the best texture. If using frozen, thaw and drain them thoroughly first, as the excess water can make the casserole soggy and prevent the brioche from puffing correctly.
Can a smaller slow cooker be used?
A 6-quart slow cooker is ideal for this recipe. If using a smaller one, you must reduce the amount of ingredients accordingly to prevent the dish from overflowing and to ensure even heat distribution.

Ingredients

  • 1 lb brioche bread, cut into 1-inch cubes
  • 3 cups fresh strawberries, sliced
  • 8 oz cream cheese, cut into small cubes
  • 6 large eggs
  • 1 1/2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 tsp vanilla bean paste
  • whipped cream, for serving
  • strawberry glaze, for serving

Instructions

  1. Grease the interior of the 6-quart Crockpot lightly with butter. Arrange half of the cubed brioche at the bottom of the slow cooker. Scatter half of the sliced strawberries and half of the cream cheese cubes over the bread. Repeat the layers with the remaining bread, strawberries, and cream cheese.
  2. In a medium mixing bowl, whisk together the eggs, heavy cream, granulated sugar, and vanilla bean paste until the mixture is smooth and well-combined. Pour the custard mixture evenly over the layered brioche and fruit in the Crockpot, ensuring all the bread cubes are thoroughly moistened.
  3. Cover the Crockpot with the lid. Cook on the LOW setting for 3 hours. The casserole is ready when the bread has puffed up like a souffle and the internal temperature of the egg custard reaches 160°F (71°C) to ensure it is cooked through. Once finished, scoop warm portions onto plates and top with fresh whipped cream and strawberry glaze.
