Before you start

Before beginning, ensure that the crockpot is clean and dry. Pit and chop the dates into uniform pieces to ensure they distribute evenly throughout the sponge batter. Have all ingredients measured and ready, especially the cream, butter, and treacle for the sauce.

Pre-warming the sauce ingredients slightly before pouring can help achieve a smoother start, though it is not strictly necessary. Ensure the crockpot is placed on a heat-resistant surface in a stable, draft-free area of the kitchen for consistent cooking results.

Ingredients at a glance (7)
  • 1 cup Medjool dates, pitted and chopped
  • 2 cups spiced date sponge batter
  • 3/4 cup muscovado brown sugar
  • 1 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/3 cup dark treacle
  • 1/2 cup cold clotted cream

Instructions

Batter Preparation

  1. Prepare the Batter
Combine the chopped dates with the spiced sponge batter in a large mixing bowl. Fold gently until the dates are evenly distributed throughout the mixture to ensure every bite contains the sweet, chewy fruit.
Look for mixture is uniform and thick
Tip ensure dates are finely chopped for better texture.

The batter should be thick, glossy, and well-integrated with the chopped dates. Ensure the dates are not clumped together in the mixture to avoid uneven baking. The consistency should be similar to a standard cake batter, holding its shape slightly when stirred with a spatula.

If the mixture seems too dry, ensure the dates have been properly prepared. Once the batter is ready, proceed immediately to the layering phase to keep the ingredients fresh and ready for the slow cooker.

Layering and Assembly

  1. Layer and Sauce
Spread the date sponge batter evenly into the base of the ceramic crockpot. Sprinkle the muscovado brown sugar over the top of the batter. In a separate bowl, whisk together the heavy cream, butter, and dark treacle until smooth, then pour this mixture over the sugar layer.
Look for sauce covers the batter layer completely
Tip do not stir the sauce into the batter.

The base layer of batter should be spread evenly to cover the bottom of the crockpot. The brown sugar should be sprinkled as a uniform layer over the top, followed by the cream and butter mixture. The sauce should naturally settle over the batter; do not attempt to mix it in. The crockpot should now look like a layered dessert ready for the heat. Once the lid is placed on, verify that it is properly seated to begin the slow-cooking process immediately.

Slow-Cook Baking

  1. Slow Cook to Perfection
Cover the crockpot with the lid and cook on high for 2.5 hours. The pudding is done when the sponge has risen, feels springy to the touch, and the internal temperature reaches 160°F (71°C) to ensure the eggs are fully cooked. Let the pudding rest for 10 minutes before serving with a dollop of cold clotted cream.
Look for sponge is airy and sauce is bubbling
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip check for doneness by inserting a toothpick into the center.

The pudding will undergo a visible transformation during the cooking phase. The sponge will rise and become light, while the sauce will bubble up around the sides of the ceramic pot, creating the signature sticky toffee look.

The kitchen will be filled with a warm, sweet aroma of caramelized sugar and dates. Check the pudding periodically through the glass lid without opening it to confirm the sponge is rising. Once the time is up, the pudding is ready to be served hot.

Common mistakes

A common mistake is opening the lid too frequently during the cooking process. Each time the lid is lifted, heat and steam escape, which can lead to an uneven rise or a dense, heavy sponge. Another error is over-mixing the batter; fold it gently to keep the sponge light and airy.

Finally, ensure the crockpot is not overfilled, as the sponge needs room to expand. If the sauce does not appear to be bubbling, increase the heat setting or check that the lid is sealed tightly.

How to tell it’s done

The pudding is properly cooked when the sponge has risen significantly and feels firm yet springy to a light touch. A toothpick inserted into the center of the cake should come out clean or with only a few moist crumbs. The internal temperature must reach 160°F (71°C) to ensure the eggs within the batter are fully cooked. Visually, the sauce around the edges of the crockpot should be thick, dark, and visibly bubbling, indicating the sugars have caramelized properly.

  • Egg dishes: 160°F (71°C) in the thickest part
