Tips for success
For even more flavor, sear the pork chops in a hot skillet with a little oil before adding them to the slow cooker.
This adds a golden crust and deeper savory notes, though it adds a few minutes to the prep. If you skip searing, the dish still works beautifully.
To make the sauce extra smooth, whisk the sour cream with a few tablespoons of the hot sauce before adding it to the slow cooker. This prevents curdling. If the sauce separates slightly, whisk it vigorously before serving to bring it back together.
Variations
- Add Mushrooms: Sauté 8 oz of sliced cremini mushrooms in butter until golden, then add them to the slow cooker with the pork chops. This boosts the earthy flavor and adds texture to the sauce.
- Use Chicken: Swap the pork chops for boneless, skinless chicken thighs. Cook on low for 4 to 5 hours, until tender and cooked through to 165°F (74°C). The sauce works perfectly with chicken.
- Make It Spicy: Add 1/2 teaspoon of crushed red pepper flakes or a dash of hot sauce to the gravy before cooking. This gives the creamy dish a subtle kick without overwhelming the other flavors.
- Creamy Mushroom Gravy: Stir in 1/2 cup of grated Parmesan cheese during the last 30 minutes of cooking for an extra savory, umami-rich gravy. Stir gently to melt the cheese into the sauce.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce may thicken; add a little broth when reheating.
- Freezer
- Freeze the cooked pork chops and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, stirring occasionally, until hot. Add a splash of chicken broth or water to loosen the sauce if needed.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The pork chops and sauce will keep well.
Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the sauce thickens too much. Serve over fresh noodles or rice.
This recipe can be assembled the night before. Place the pork chops in the slow cooker, add the soup, ranch mix, sour cream, and gravy, then cover and refrigerate.
In the morning, place the insert in the slow cooker and cook on low as directed. Add about 30 minutes to the cooking time since the ingredients start cold.
Serving ideas
Serve the pork chops and gravy over a generous pile of buttered egg noodles, letting the sauce soak into every strand. A side of steamed green beans or a crisp salad balances the richness. The dish is hearty enough to be a complete meal on its own.
For a low-carb option, skip the noodles and serve the pork chops with roasted vegetables or mashed cauliflower.
The creamy sauce also pairs well with crusty bread for dipping. Garnish with fresh parsley or chives if desired, though the video keeps it simple.

Crockpot Sour Cream Ranch Mushroom Pork Chops

Ingredients
- 4 thick-cut boneless center-cut pork loin chops
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 oz dry buttermilk ranch seasoning mix
- 1/2 cup sour cream
- 1 cup savory pan gravy
- 12 oz wide egg noodles, cooked and buttered, for serving
Instructions
- Place the thick-cut boneless pork loin chops in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. They should cover the bottom evenly so they cook uniformly. No need to season with salt yet because the ranch mix and gravy add plenty of flavor.
- Spoon the condensed cream of mushroom soup over the pork chops, spreading it gently to cover. Sprinkle the dry buttermilk ranch seasoning mix evenly over the soup and chops. Do not stir; the layers will meld during cooking.
- Dollop the sour cream over the top in small spoonfuls, then pour the savory pan gravy over everything. Use the back of a spoon to gently spread the gravy so it covers the surface. Do not stir the ingredients together.
- Cover the slow cooker and cook on low for 6 to 7 hours, until the pork chops are fork-tender and easily pull apart. The sauce will bubble gently around the edges. Do not lift the lid during the first 5 hours to keep the heat steady. Let it rest for 3 minutes before slicing.
- After 6 hours, insert an instant-read thermometer into the thickest part of a pork chop. It should read at least 145°F (63°C). If not, continue cooking for another 30 minutes and check again. Let the meat rest for 3 minutes before serving.
- While the pork chops rest, bring a large pot of salted water to a boil. Cook the wide egg noodles according to package directions until al dente. Drain well and toss with a pat of butter, if desired. Keep warm until serving.
- Spoon the noodles onto serving plates or a large platter. Use a slotted spoon to lift the pork chops from the slow cooker and place them over the noodles. Ladle the creamy mushroom-ranch gravy over the top, making sure each serving gets plenty of sauce.
