Tips for success
For the best texture, cut the ribeye into uniform 1-inch cubes so they cook evenly. If you have time, let the beef come to room temperature for 30 minutes before adding it to the slow cooker—this helps it cook more evenly.
Do not skip the rest time at the end; it allows the juices to settle and keeps the meat moist. If you want a thicker gravy, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the sauce during the last 30 minutes of cooking.
The gravy is the star, so don't be shy with it. Spoon it generously over the noodles and let it soak in. If you prefer a more pronounced garlic flavor, add an extra tablespoon of minced garlic.
For a touch of brightness, a squeeze of lemon juice or a sprinkle of fresh parsley just before serving can lift the richness. This dish is forgiving, so feel free to adjust the seasonings to your taste.
Variations
- Add Mushrooms: Add 8 oz sliced cremini mushrooms along with the potatoes. They will release moisture and add an earthy flavor that complements the beef and gravy.
- Spicy Kick: Stir 1 teaspoon smoked paprika and 1/2 teaspoon cayenne pepper into the sour cream before adding it to the slow cooker for a smoky, spicy twist.
- Herb Infusion: Sprinkle 1 teaspoon dried thyme and 1 teaspoon dried rosemary over the beef before adding the sour cream. These herbs will infuse the gravy with a savory, aromatic note.
- Vegetable Boost: Add 2 large carrots, peeled and cut into 1-inch chunks, and 1 cup frozen peas during the last 30 minutes of cooking for extra color and nutrition.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; add a splash of broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating gently.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a little beef broth if needed to loosen the sauce.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the dish even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the sauce has thickened too much.
You can assemble the slow cooker insert the night before: layer the beef, potatoes, garlic, sour cream, and gravy mix, then cover and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. If the insert is cold, add about 30 minutes to the cooking time.
Serving ideas
Serve the ribeye bites and potatoes over a bed of warm buttered egg noodles, with the mahogany gravy spooned generously over the top.
The noodles soak up the sauce and provide a comforting base for the rich beef. A side of crusty bread or a simple green salad with a tangy vinaigrette would round out the meal nicely.
For a low-carb option, serve the beef and potatoes with steamed broccoli or green beans instead of noodles. The gravy is also delicious over mashed potatoes or polenta.
If you have leftovers, they make an excellent filling for tacos or a topping for baked potatoes. The dish is hearty enough to be a complete meal on its own, but it also pairs well with a glass of full-bodied red wine.

Crockpot Sour Cream Garlic Ribeye Bites

Ingredients
- 2 lb well-marbled ribeye steak, cut into 1-inch cubes
- 1 1/2 lb baby Yukon Gold potatoes, halved
- 2 tbsp minced garlic
- 1 cup sour cream
- 1 oz brown gravy mix (1 packet)
- Buttered egg noodles, for serving
Instructions
- Place the cubed ribeye bites in the bottom of a 6-quart slow cooker. Scatter the halved baby Yukon Gold potatoes and minced garlic over and around the beef, so everything is evenly distributed. Do not stir; the layers will meld during cooking.
- Dollop the sour cream over the top of the beef and potatoes. Sprinkle the brown gravy mix evenly over the sour cream. Do not stir; the sauce will come together as the slow cooker heats.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the beef is fork-tender and the potatoes are easily pierced. The sauce will darken and become a rich mahogany gravy as the sour cream and gravy mix meld with the beef juices. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Let the beef rest in the sauce for at least 3 minutes before serving. The internal temperature of the beef should read at least 145°F (63°C) on an instant-read thermometer. Serve hot over buttered egg noodles, spooning extra gravy over the top.
