Tips for success

For the crispiest bacon, cook it in a skillet over medium heat until it’s deeply browned and crunchy, then drain on paper towels.

Alternatively, use pre-cooked bacon bits for convenience, but check that they are not too salty. If you want to add a little extra smoke, sprinkle a pinch of smoked paprika over the top before cooking.

To make this dish vegetarian, omit the bacon and add a can of drained black beans or extra green chiles. Increase the cheese slightly to compensate for the lost richness.

You can also add a layer of sautéed onions and mushrooms for more depth. Just keep the total volume similar to the original recipe to maintain the right texture.

Variations

  • Spicy Chorizo Version: Swap the bacon for 1/2 pound cooked and crumbled chorizo sausage. Add an extra 1/2 cup of green chiles and a pinch of cayenne for a fiery kick. The chorizo adds a rich, smoky depth that pairs beautifully with the Gouda.
  • Loaded Potato Take: Add 1 cup of thawed and drained frozen corn and 1/2 cup of chopped red bell pepper to the layer with the chiles. Top with extra shredded cheddar cheese before serving. This version is brighter and sweeter, perfect for summer gatherings.
  • Breakfast Bake: Omit the soup and instead whisk 6 eggs with 1/2 cup of milk, salt, and pepper. Pour over the tots, bacon, and chiles, then top with the cheeses. Cook on low for 3-4 hours until the eggs are set. Serve with hot sauce.
  • Smoky Mushroom & Onion: Sauté 1 cup of sliced mushrooms and 1/2 cup of diced onion in a little butter until golden, then layer them with the tots and chiles. Use a smoked cheddar soup instead of regular and add a teaspoon of smoked paprika. This vegetarian version is deeply savory.

Storage and make-ahead

Fridge
Store leftover casserole in an airtight container in the refrigerator for up to 4 days.
Freezer
Freeze the fully cooked and cooled casserole in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat individual portions in the microwave for 1-2 minutes, or reheat the whole casserole in a 350°F (175°C) oven for 15-20 minutes, covered with foil.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The casserole will thicken as it cools; reheat gently in the microwave or on the stovetop with a splash of milk to restore its creamy texture. For best results, portion out individual servings before refrigerating.

This recipe is perfect for making ahead. Assemble the layers in the slow cooker insert the night before, cover, and refrigerate.

In the morning, place the insert in the slow cooker and cook on low as directed, adding about 30 minutes to the cooking time since you’re starting from cold. Alternatively, cook the full recipe, let it cool, and freeze it in a freezer-safe container for up to 3 months.

Serving ideas

Serve this bake as a main dish with a crisp green salad or steamed vegetables on the side. It’s also fantastic as a hearty side for grilled meats or as a party dish—set out the slow cooker with a pile of spoons and let guests help themselves.

For a fun twist, spoon the mixture into warm tortillas or over nachos for a loaded potato-inspired snack.

Garnish with extra crumbled bacon, chopped chives, or a dollop of sour cream if desired (though the video doesn’t show these, they are optional). The dish pairs well with a cold beer or a sparkling water with lime. Leftovers are just as delicious the next day—try them for breakfast with a fried egg on top.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, you can assemble the entire casserole in the slow cooker insert the night before and refrigerate it. In the morning, place the insert in the slow cooker and cook on low for 4 to 4.5 hours (add 30 minutes because the ingredients are cold). Alternatively, cook the dish fully, cool it, and refrigerate for up to 4 days; reheat gently before serving.
Why does the cheese sometimes separate or become greasy?
Cheese can separate if it’s cooked at too high a temperature or for too long. This recipe uses low heat, which keeps the cheese creamy. Using freshly shredded cheese (rather than pre-shredded, which contains anti-caking agents) also helps it melt smoothly. If the cheese looks greasy, it may have been cooked too long; stick to the recommended 4 hours.
Can this be made without a slow cooker?
Yes, you can bake it in a 9x13-inch casserole dish in a 350°F (175°C) oven. Cover with foil and bake for 45 minutes, then uncover and bake for 10-15 minutes more until the cheese is bubbly and the tots are tender. The cooking time may vary, so check periodically.
How can you make this dish spicier?
Use hot Hatch green chiles or add a finely chopped jalapeño to the layer with the chiles. You can also add a pinch of cayenne pepper or a few dashes of hot sauce to the soup before pouring it over. For extra heat, stir in 1/2 teaspoon of crushed red pepper flakes along with the cheeses.
What can you do with leftovers?
Leftovers are excellent! Reheat individual portions in the microwave or on the stovetop with a splash of milk. You can also use leftover casserole as a filling for breakfast burritos—wrap it in a tortilla with scrambled eggs. Store leftovers in the refrigerator for up to 4 days.

Crockpot filled with bubbling smoked Gouda green chile tater tot bake, golden and cheesy

Ingredients

  • 2 lb frozen golden potato tater tots
  • 1 cup crispy crumbled bacon (about 12 slices cooked)
  • 1 cup fire-roasted Hatch green chiles, chopped
  • 1 can (10.5 oz) condensed cheddar cheese soup
  • 1 1/2 cups shredded smoked gouda cheese
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese

Instructions

  1. Place the frozen tater tots in an even layer in the bottom of a 6-quart slow cooker. Sprinkle the crispy crumbled bacon evenly over the tots. Scatter the chopped Hatch green chiles over the bacon.
  2. Pour the condensed cheddar cheese soup over the potato mixture. Use a spatula to spread it gently, but do not stir—leave the layers intact for even cooking.
  3. Sprinkle the shredded smoked gouda evenly over the soup layer, followed by the grated Parmigiano-Reggiano. Press down lightly with a spoon to help the cheeses settle into the mixture.
  4. Cover the slow cooker and cook on LOW for 4 hours, or until the tater tots are tender and the cheese is bubbly and golden around the edges. Do not lift the lid during the first 3 hours.
  5. Turn off the slow cooker and let the bake rest for 5 minutes. Spoon onto plates or serve directly from the Crockpot. The dish is done when the tots are fork-tender and the sauce is thick and creamy.
