Tips for success

For the most flavorful sauce, use a good-quality aged Gruyère. The older the cheese, the more pronounced its nutty, savory notes will be. If you prefer a milder flavor, use a young Gruyère or a Swiss cheese.

You can also swap the baby Yukon Gold potatoes for red potatoes or fingerlings—just make sure they are similar in size so they cook evenly.

To make this dish even easier, you can assemble everything in the slow cooker insert the night before, cover it, and refrigerate.

In the morning, simply place the insert in the slow cooker base and turn it on. If you do this, you may need to add 30 minutes to the cooking time because the ingredients start out cold.

Variations

  • Add Mushrooms: Sauté 8 oz sliced cremini mushrooms in butter until golden, then add them to the slow cooker with the beef. They'll add an earthy depth to the sauce.
  • Use Chicken: Substitute boneless, skinless chicken thighs for the sirloin tips. Cook on LOW for 4-5 hours. The chicken will be tender and the sauce will be just as creamy.
  • Make It Spicy: Add 1/2 teaspoon red pepper flakes or a diced jalapeño along with the garlic for a subtle heat that cuts through the richness.
  • Vegetarian Version: Replace the beef with 1 lb of halved cremini mushrooms and add 1 can of drained chickpeas. Cook on LOW for 4 hours—the mushrooms will be meaty and satisfying.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until bubbling and heated through. Or microwave in 30-second bursts, stirring between.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The sauce may thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water to thin it if needed.

This dish can be made up to 2 days ahead. Cook it completely, then let it cool to room temperature (but no more than 2 hours), and refrigerate. Reheat gently on the stovetop over medium-low heat, stirring occasionally, until heated through.

Serving ideas

Serve the sirloin tips and potatoes over toasted garlic brioche slices, letting the bread soak up the creamy sauce.

A simple green salad with a tangy vinaigrette makes a nice contrast to the richness of the dish. You can also spoon it over mashed potatoes, rice, or egg noodles.

For a complete meal, add a side of steamed green beans or roasted asparagus. The creamy sauce also works well with crusty bread for dipping.

Garnish with a sprinkle of fresh parsley or chives if you like, though the video doesn't show it.

Frequently asked questions

Can this recipe be made in a Dutch oven instead of a slow cooker?
Yes. Brown the beef in a Dutch oven over medium-high heat, then add the potatoes, garlic, and cheeses. Cover and cook in a 325°F (165°C) oven for 2 1/2 to 3 hours, until the beef is fork-tender.
What if the sauce is too thin?
If the sauce is thinner than you'd like after cooking, remove the beef and potatoes with a slotted spoon, then simmer the sauce on the stovetop over medium heat for 10-15 minutes to reduce and thicken it. You can also whisk in a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water.
How long can leftovers be kept?
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave. For longer storage, freeze for up to 3 months.
Can this be made without the brioche?
Absolutely. The brioche is just for serving, and the dish is delicious on its own or over rice, mashed potatoes, or egg noodles. The brioche soaks up the sauce nicely, but it's optional.
Why does the recipe call for aged Gruyère?
Aged Gruyère has a more intense, nutty flavor than young Gruyère, which adds depth to the sauce. If you prefer a milder taste, use young Gruyère or a good Swiss cheese.

Slow cooker sirloin tips with baby potatoes and creamy Gruyère sauce

Ingredients

  • 2 lb top sirloin steak tips, cut into bite-size pieces
  • 1 1/2 lb baby Yukon Gold potatoes, halved
  • 2 tbsp minced garlic
  • 8 oz cream cheese, softened
  • 1 1/2 cups shredded aged Gruyère cheese
  • Toasted garlic brioche slices, for serving

Instructions

  1. Place the sirloin steak tips in the bottom of a 6-quart slow cooker. Scatter the halved baby Yukon Gold potatoes over and around the beef. Sprinkle the minced garlic evenly over the top.
  2. Drop the softened cream cheese in chunks over the beef and potatoes. Sprinkle the shredded Gruyère cheese over everything.
  3. Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the beef is fork-tender and the potatoes are easily pierced with a knife. The sauce will be bubbly and thickened. Let it rest for 3 minutes before slicing.
  4. To ensure the beef is safe to eat, insert an instant-read thermometer into a few pieces of sirloin. The temperature should read at least 145°F (63°C). Then let the beef rest for at least 3 minutes before serving.
  5. Ladle the hot sirloin tips, potatoes, and creamy sauce over toasted garlic brioche slices on serving plates. Spoon extra sauce over the top.
