Before you start

Before beginning, ensure your pork shoulder is trimmed of excess fat and cut into uniform 1-inch cubes to ensure even cooking. Dice your pineapple, white onion, and avocados, and have your Mexican rice and black beans prepared or warmed.

Measure your achiote-guajillo adobo sauce and ensure your slow cooker is clean and ready. Having all ingredients prepped and measured makes the assembly process fast and efficient, allowing you to get the slow cooker started in minutes.

Ingredients at a glance (11)
  • 3 lb pork shoulder, cut into cubes
  • 2 cups fresh pineapple, diced
  • 1 cup red achiote-guajillo adobo sauce
  • 1 white onion, diced
  • 1/2 cup cilantro stems
  • 2 cups Chihuahua cheese, shredded
  • 4 cups Mexican rice, cooked
  • 2 cups black beans, cooked
  • 2 avocados, diced
  • 1/2 cup Mexican crema
  • 3 key limes, cut into wedges

Instructions

Layering and Initial Cook

  1. Layering the slow cooker
Place the cubed pork shoulder into the slow cooker. Add the diced pineapple, red achiote-guajillo adobo sauce, diced white onion, and fresh cilantro stems. Ensure the ingredients are evenly distributed to allow for consistent cooking throughout the process.
Look for The ingredients should be layered evenly to ensure the sauce coats the meat thoroughly.
Tip Adding the pineapple early helps break down the pork fibers, resulting in a more tender final texture.

At the end of this phase, the ingredients are neatly arranged in the slow cooker, ready for the long, slow simmer. Everything should be layered to ensure the meat is in direct contact with the sauce and aromatics. The kitchen will soon begin to fill with the warm, smoky aroma of guajillo chiles and sweet pineapple as the slow cooker begins its work.

Shredding and Melting

  1. Slow cooking the pork
Cover and cook on LOW for seven hours. Once the time is up, use two forks to shred the pork directly in the slow cooker, incorporating the pineapple and sauce into the meat strands. Sprinkle the shredded Chihuahua cheese over the top and cover until melted. Ensure the pork reaches an internal temperature of at least 145°F (63°C) and let it rest for at least 3 minutes before serving.
Look for The meat should pull apart into tender strands with very little resistance when pierced with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the sauce appears too thin after shredding, cook uncovered on high for an additional 15 minutes to thicken.

The pork is now tender and ready to be shredded into succulent strands. After incorporating the sauce and adding the Chihuahua cheese, the dish should look rich and inviting. The cheese should be fully melted and the mixture should be steaming hot. At this stage, check that the pork is uniformly tender and that the sauce has achieved a thick, glossy consistency.

Final Assembly

  1. Assembling the bowls
Divide the cooked Mexican rice and black beans into six serving bowls. Top each portion with the shredded pork al pastor mixture. Garnish with diced avocado, a dollop of Mexican crema, and fresh cilantro. Serve immediately with a squeeze of fresh key lime juice over the top.
Look for The bowls should be assembled while the pork and rice are still steaming hot for the best flavor.
Tip Rest the pork for at least 5 minutes after shredding to allow the flavors to settle before serving.

The bowls are assembled with a base of rice and beans, topped with the flavorful pork mixture and fresh garnishes.

The final dish should look visually appealing, with a contrast between the crimson pork, the bright green cilantro and avocado, and the creamy white crema. The aroma should be a balanced mix of smoky, sweet, and fresh notes, ready to be enjoyed immediately.

Common mistakes

Avoid over-crowding the slow cooker, as this can prevent the pork from cooking uniformly. Do not skip the shredding step, as it is essential for the pork to absorb the juices and sauce properly.

Refrain from adding too much extra liquid, as the pineapple and pork will release plenty of juice during the seven-hour cook. Finally, do not add the cheese too early; wait until the pork is fully shredded and ready to serve to ensure the best texture.

How to tell it’s done

The pork is done when it reaches a minimum internal temperature of 145°F (63°C) and shreds easily with a fork. The meat should be vibrant red from the adobo, tender to the touch, and well-coated in the thickened sauce.

The cheese should be completely melted and bubbly over the top of the shredded pork. Remember to let the pork rest for at least 3 minutes before serving to allow the juices to redistribute for maximum flavor.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
