Tips for success
For the most tender pork, always choose the low heat setting on your slow cooker. The longer, gentler cooking time breaks down the meat's fibers more effectively than high heat.
If you're short on time, high heat works, but the texture won't be quite as meltingly tender. Also, try to arrange the pork in a single layer as much as possible — overlapping is fine, but the more surface area touches the liquid, the more evenly it cooks.
The gravy is the star, so don't skimp on the onion soup mix. It's what gives the sauce its deep, savory flavor.
If you want a thicker gravy, mix 1 tablespoon cornstarch with 2 tablespoons cold water and whisk it into the slow cooker during the last 30 minutes of cooking. Let it bubble and thicken before serving. For extra richness, you can stir in a tablespoon of butter at the end.
Variations
- Mushroom Gravy: Add 8 oz sliced mushrooms along with the onions. The mushrooms will release their liquid and add an earthy depth to the gravy. If you like, use cream of mushroom soup instead of onion soup mix for an extra-rich sauce.
- Spicy Kick: Stir in 1 teaspoon hot sauce or a pinch of red pepper flakes with the broth. The heat balances the sweetness of the onions and ketchup. Serve with a dollop of sour cream to cool things down.
- Herb Infusion: Add 2 sprigs fresh thyme or 1 teaspoon dried thyme to the slow cooker with the broth. Rosemary also works well. Remove the herb stems before serving for a clean, fragrant gravy.
- Balsamic Glaze: Replace the ketchup with 2 tablespoons balsamic vinegar. The vinegar adds a tangy, slightly sweet depth that pairs beautifully with the pork. You may need a touch of honey or brown sugar to balance the acidity.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze cooled pork and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Or microwave in 30-second bursts, stirring between.
Leftover pork and gravy keep well in an airtight container in the refrigerator for up to 4 days. The flavors continue to meld, making the leftovers even more delicious. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the gravy has thickened too much.
You can assemble the entire dish the night before: place the pork and onions in the slow cooker insert, mix the gravy base, and pour it over. Cover and refrigerate overnight. In the morning, simply put the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cooking time if starting from cold.
Serving ideas
This Salisbury pork is made for spooning over a pile of creamy mashed potatoes. The gravy seeps into every nook, and the tender pork flakes apart with just a fork.
Buttered egg noodles are another classic partner, and crusty bread works wonders for sopping up the sauce. For a lighter side, serve with steamed green beans or a crisp salad.
For a complete dinner, set out the pork steaks on a platter with the gravy in a gravy boat. Let everyone help themselves.
The dish is hearty enough to stand alone, but a side of roasted vegetables or a simple coleslaw adds a fresh crunch. Leftovers make a fantastic sandwich the next day — pile the pork and gravy onto a soft roll and enjoy.
