Tips for success

For the most tender beef, choose ribeye with good marbling. The fat melts during cooking, basting the meat and adding richness.

If you prefer a deeper flavor, sear the beef cubes in a hot skillet for 2-3 minutes per side before adding to the slow cooker. This adds a caramelized crust, but it is optional. Do not skip the rest time after cooking—it is crucial for juiciness.

To make the sauce extra smooth, stir it gently after cooking. If it looks separated, whisk it lightly. For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker, then cook for 15 minutes. Serve with crusty bread to soak up the sauce, or over mashed potatoes or egg noodles for a heartier meal.

Variations

  • Add Bacon: Cook 4 slices of bacon until crisp, crumble, and stir into the slow cooker during the last 30 minutes of cooking. The smoky flavor pairs perfectly with the creamy sauce.
  • Spicy Kick: Add 1/2 teaspoon red pepper flakes or a diced jalapeño with the onions for a subtle heat that cuts through the richness.
  • Swap the Meat: Use cubed sirloin or chuck roast instead of ribeye. Adjust cooking time: sirloin about 4 hours, chuck 6-8 hours, until tender.
  • Herb Infusion: Stir in 1 teaspoon dried thyme and 1 teaspoon dried rosemary with the soup for an earthy, aromatic note.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth if the sauce thickens.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a little beef broth or water to loosen the sauce if needed.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools. Reheat gently in the microwave or on the stovetop, adding a splash of beef broth or water if needed to loosen the sauce.

You can assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed.

Add 30 minutes to the cooking time if starting from cold. Alternatively, cook the dish fully, let it cool, and refrigerate. Reheat on the stovetop or in the slow cooker on low.

Serving ideas

Serve the ribeye bites hot, spooned over toasted garlic brioche or alongside crusty bread. The sauce is rich, so a light side salad with a tangy vinaigrette helps balance the flavors.

For a more substantial meal, serve over mashed potatoes, polenta, or egg noodles. A sprinkle of fresh parsley or chives adds color and freshness, though it is not required.

This dish is best enjoyed immediately after cooking, while the beef is still tender and the sauce is warm and velvety. It also makes excellent leftovers for lunch the next day—just reheat gently to avoid overcooking the beef.

For a special occasion, serve in shallow bowls with the brioche on the side for dipping. The creamy, savory sauce is sure to impress.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. Cook as directed the next day, adding 30 minutes to the cooking time. Leftovers can also be refrigerated for up to 4 days and reheated gently.
Why is the beef tough?
Tough beef usually results from cooking on high heat or using a lean cut. Always cook on low and use a well-marbled cut like ribeye. If the beef is still tough, continue cooking on low for another 30-60 minutes until it becomes fork-tender.
Can the sauce be thickened?
If the sauce is too thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker. Cook on high for 15-20 minutes until thickened. Alternatively, leave the lid off for the last 30 minutes to reduce the sauce.
What can be served with this dish?
This dish is excellent over mashed potatoes, egg noodles, polenta, or with crusty bread to soak up the sauce. A simple green salad with a vinaigrette balances the richness. Toasted garlic brioche is the classic pairing.
Is this recipe gluten-free?
Not as written, because cream of mushroom soup and brioche contain gluten. Use a gluten-free cream soup and serve with gluten-free bread or omit the bread to make it gluten-free. Always check labels for certified gluten-free products.

Crockpot Gruyère Cream Mushroom Ribeye Bites

Prep 10 minCook 4 hTotal 4 h 10 minServes 6
A slow cooker filled with creamy ribeye bites and mushrooms, topped with melted Gruyère

Ingredients

  • 2 lb well-marbled ribeye steak, cut into 1-inch cubes
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup diced white onions
  • 8 oz cream cheese, softened
  • 1 cup shredded Gruyère cheese
  • 8 oz sliced mushrooms
  • Toasted garlic brioche slices, for serving

Instructions

  1. Place the cubed ribeye bites in the bottom of a 6-quart slow cooker. Spread the diced onions over the beef. Pour the condensed cream of mushroom soup evenly over the top. Add the softened cream cheese in dollops, then sprinkle the shredded Gruyère over everything. Do not stir.
  2. Scatter the sliced mushrooms over the top of the cheese and soup mixture. Press them down gently with a wooden spoon so they are partially submerged in the liquid. The mushrooms will release moisture as they cook, helping create the sauce.
  3. Cover the slow cooker with the lid. Cook on low for 4 to 6 hours, until the beef is fork-tender and the sauce is bubbling around the edges. Do not lift the lid during the first 3 hours to keep the heat steady. Let it rest for 3 minutes before slicing.
  4. After 4 hours, remove the lid and stir the mixture gently. The beef should be fork-tender and easily pierced. If not, continue cooking for another 30 to 60 minutes. When the beef reaches 145°F (63°C) for medium-rare, it is safe to eat, but for fall-apart tenderness, cook until it reaches 160°F (71°C) or higher. Let it rest for 3 minutes before slicing.
  5. Once the beef is cooked to your desired doneness, turn off the slow cooker. Let the beef rest for at least 3 minutes before serving. This allows the juices to redistribute throughout the meat, keeping each bite moist and flavorful.
  6. Just before serving, toast the garlic brioche slices until golden and crisp. Place them on a serving plate or directly on individual plates.
  7. Using a serving spoon, scoop a generous portion of the ribeye bites and sauce onto each plate next to the toasted brioche. Pour extra sauce over the top. Serve hot.
