Tips for success
For the most tender beef, choose ribeye with good marbling and cut it into uniform 1-inch cubes. This ensures even cooking. If using a leaner cut, consider adding a splash of beef broth to keep the meat moist during the long cook.
To enhance the flavor, sear the beef cubes in a hot skillet for 2-3 minutes per side before adding them to the slow cooker.
This adds a rich, caramelized crust, but it's optional. For a thicker sauce, remove the lid during the last 30 minutes of cooking to allow some liquid to evaporate.
Variations
- Mushroom and Thyme: Add 8 oz sliced cremini mushrooms and 1 tsp dried thyme along with the potatoes. The mushrooms will absorb the creamy sauce and add an earthy flavor. Cook as directed.
- Spicy Kick: Stir in 1-2 tsp red pepper flakes or a diced jalapeño with the garlic for a subtle heat. For extra warmth, add a pinch of cayenne pepper to the cheese layer.
- Bacon-Parmesan: Top the finished dish with 4 slices of cooked, crumbled bacon and 1/2 cup grated Parmesan cheese. The salty, smoky bacon complements the creamy sauce beautifully.
- Herb-Infused: Mix 2 tbsp chopped fresh rosemary and 2 tbsp chopped fresh parsley into the cream cheese before adding. The herbs will infuse the sauce with bright, aromatic notes.

Serving ideas
Serve the ribeye bites and potatoes with a generous ladle of the creamy Gruyère sauce. Toasted garlic brioche slices are perfect for dipping and soaking up every bit of the rich sauce. For a complete meal, add a simple green salad or steamed green beans on the side.
This dish is hearty enough to stand alone, but it also pairs well with roasted vegetables or a crusty baguette.
For a festive touch, garnish with fresh thyme or parsley. The creamy sauce also complements mashed potatoes or polenta if you want to stretch the meal further.

Crockpot Ribeye Bites with Gruyère Cream Sauce

Ingredients
- 2 lb well-marbled ribeye steak, cut into 1-inch cubes
- 1 1/2 lb baby Yukon Gold potatoes, halved
- 2 tbsp minced garlic
- 8 oz cream cheese, softened
- 2 cups shredded Gruyère cheese
- Toasted garlic brioche slices, for serving
Instructions
- Place the cubed ribeye bites evenly in the bottom of a 6-quart slow cooker. Scatter the halved baby potatoes over the beef, then sprinkle the minced garlic over the top. No need to stir—just layer them in order.
- Drop the softened cream cheese in chunks over the beef and potatoes, then sprinkle the shredded Gruyère evenly over the top. Leave the ingredients as they are—the slow cooker will melt everything together.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the beef is tender and the potatoes are fork-tender. The sauce will be bubbly and thick. Do not stir during cooking to allow the cheese to melt gently. Let it rest for 3 minutes before slicing.
- Use an instant-read thermometer to check the internal temperature of a few beef cubes. They should read at least 145°F (63°C) for medium-rare, or 160°F (71°C) for medium. If not there yet, continue cooking in 15-minute increments.
- Once the beef is cooked, turn off the slow cooker and let the dish rest for 5 to 10 minutes. The sauce will thicken slightly as it rests. Serve the ribeye bites and potatoes with a generous ladle of the creamy Gruyère sauce, accompanied by toasted garlic brioche slices for dipping.
