Tips for success
For the best flavor, use high-quality marinara sauce with San Marzano tomatoes. The sauce is the backbone of the dish, so choose one with a robust, slightly sweet taste.
If you have time, make your own marinara, but a good jarred version works perfectly. Also, don't skip browning the sausage—it adds a depth of flavor that you can't get from just simmering raw meat.
To achieve perfect tortellini texture, cook on LOW rather than HIGH. The longer, gentler heat allows the pasta to cook evenly without becoming mushy. If your slow cooker tends to run hot, start checking at the 3-hour mark. You can also add a splash of water or broth if the sauce seems too thick, but avoid over-stirring.
Variations
- Spicy Sausage: Use hot Italian sausage instead of sweet for a kick of heat. You can also add a pinch of red pepper flakes to the marinara for extra spice.
- Veggie-Packed: Add a cup of chopped spinach or kale in the last 30 minutes of cooking, or layer sliced mushrooms and bell peppers with the sausage.
- Cheese Swap: Replace the provolone with shredded mozzarella or a blend of Italian cheeses. For a sharper flavor, use aged provolone or add a sprinkle of Parmesan before serving.
- Gluten-Free: Use gluten-free cheese tortellini and ensure the marinara is gluten-free. Check that all other ingredients are certified gluten-free if needed.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 4 days. Reheat gently on the stove or microwave, adding a splash of water or broth to loosen the sauce.
- Freezer
- Freeze cooled leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 2-3 minutes, or in a skillet over medium heat with a splash of water or broth.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The dish will thicken as it cools; add a splash of water or broth when reheating to restore the saucy consistency. Reheat individual portions in the microwave or warm gently in a saucepan over low heat.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on LOW for 4-5 hours.
If starting from cold, add an extra 30-45 minutes to the cooking time. Alternatively, brown the sausage and shred the cheese in advance to speed up prep.
Serving ideas
Serve this tortellini hot, straight from the slow cooker, with a sprinkle of fresh parsley or basil if desired (though the video doesn't include it).
Pair it with a simple green salad and crusty bread to soak up the extra sauce. It's a complete meal on its own, but a side of garlic bread or roasted vegetables makes it even more satisfying.
For a family-style dinner, place the slow cooker on the table and let everyone serve themselves. The cheese pulls and the steam rising make it a beautiful, inviting centerpiece.
This dish also works well for potlucks or casual gatherings—it stays warm in the slow cooker and is easy to transport. Just remember to keep it covered until ready to serve.

Provolone Sausage Marinara Tortellini Crockpot Recipe

Ingredients
- 1 lb browned sweet Italian pork sausage crumbles
- 20 oz refrigerated three-cheese tortellini
- 24 oz crushed San Marzano marinara sauce
- 1 cup whole-milk ricotta cheese
- 2 cups shredded provolone cheese
Instructions
- Place the browned sweet Italian pork sausage crumbles in an even layer in the bottom of a 6-quart slow cooker. If the sausage is not pre-browned, cook it in a skillet over medium-high heat until browned and cooked through, then drain and add to the slow cooker.
- Scatter the refrigerated three-cheese tortellini over the sausage. Pour the crushed San Marzano marinara sauce over the tortellini, using a spatula to spread it evenly and ensure the tortellini is mostly covered by the sauce.
- Spoon dollops of whole-milk ricotta cheese over the sauce. Sprinkle the shredded provolone cheese evenly over the top, covering the ricotta and tortellini completely.
- Cover the slow cooker and cook on LOW for 4 hours, or until the tortellini are tender and the sauce is bubbling around the edges. Do not lift the lid during the first 3 hours to maintain heat.
- After 4 hours, carefully remove the lid and test a tortellini by cutting it with a spoon. It should be tender but still hold its shape. The internal temperature of the sausage should reach 160°F (71°C) if any chunks are visible.
- Use a large serving spoon to scoop the tortellini, sausage, and sauce onto plates or into bowls. The cheese should stretch as you lift, and the sauce should coat the pasta evenly.
