Before you start

Before starting, gather all ingredients and equipment. If using sausage links, remove the casings and crumble the meat. Measure the marinara sauce, ricotta, and shredded provolone. Have a large skillet ready for browning the sausage.

Ensure the slow cooker is clean and ready. No need to pre-cook the pasta; it will cook in the sauce. Set out measuring spoons and a wooden spoon for stirring. This recipe is straightforward, so minimal prep is required.

Ingredients at a glance (6)
  • 1 lb sweet Italian pork sausage, casings removed
  • 1 lb ziti pasta
  • 24 oz marinara sauce
  • 1 tbsp Italian herb seasoning
  • 1 cup whole-milk ricotta cheese
  • 2 cups shredded provolone cheese

Instructions

Brown the sausage

  1. Brown the sausage
In a large skillet over medium-high heat, cook the sweet Italian sausage, breaking it into crumbles, until browned and cooked through, about 8 minutes. Drain excess fat if needed.
Look for Sausage is browned and no longer pink.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Browning adds depth and prevents greasy sauce.
  2. Layer in the Crockpot
Transfer the browned sausage to the bottom of a 7-quart slow cooker. Add the ziti pasta, marinara sauce, and Italian herb seasoning. Stir gently to combine.
Look for Pasta is coated with sauce and herbs.
Tip Stirring helps distribute the seasoning.

The sausage should be nicely browned with crispy edges. It will release its fat, which adds flavor. Drain excess fat to avoid a greasy final dish. The kitchen will smell savory and inviting. The sausage should be fully cooked through, with no pink remaining. This step ensures the meat is safe and adds a rich, caramelized flavor to the dish.

Layer and slow cook

  1. Add ricotta and provolone
Spoon dollops of ricotta over the pasta mixture. Sprinkle the shredded provolone evenly on top.
Look for Ricotta dollops and provolone cover the surface.
Tip Do not stir after adding cheese to keep layers.

After adding all ingredients, the slow cooker should be filled to about three-quarters full. The sauce should cover the pasta completely. As it cooks, the sauce will bubble, and the cheese will melt.

The aroma of tomato, herbs, and cheese will fill the kitchen. The pasta will soften and absorb the sauce, creating a thick, hearty consistency.

Serve and enjoy

  1. Slow cook until bubbly
Cover and cook on low for 4 hours, or until the pasta is tender and the sauce is bubbling around the edges.
Look for Sauce bubbles and cheese is melted and golden.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Cook on low to avoid overcooking the pasta.
  2. Serve hot
Stir gently to combine the cheesy layers. Serve hot directly from the Crockpot or spoon onto plates.
Look for Cheese stretches and pasta is tender.
Tip Let rest 5 minutes before serving for easier scooping.

The finished dish should be bubbling and the cheese fully melted with a slightly golden top. The pasta should be tender but not mushy. The sauce will be thick and cling to the pasta. The ricotta will have blended into creamy pockets, and the provolone will stretch when scooped. Serve hot, with an optional sprinkle of fresh herbs if desired.

Common mistakes

One common mistake is stirring the cheese into the pasta before cooking, which can make the dish greasy. Instead, layer the cheese on top and let it melt slowly. Another mistake is using too much liquid, which can make the pasta mushy.

Stick to the recommended amount of marinara. Also, avoid opening the slow cooker lid frequently, as this releases heat and extends cooking time. Finally, don't overbrown the sausage; it should be just cooked through to keep it juicy.

How to tell it’s done

The baked ziti is done when the pasta is tender and easily pierced with a fork, and the sauce is bubbling around the edges. The internal temperature of the sausage should be at least 160°F (71°C).

The cheese should be melted and lightly golden on top. If the pasta is still firm, cook for an additional 30 minutes. Let the dish rest for 5 minutes before serving to allow the flavors to settle.

  • Ground meat: 160°F (71°C) in the thickest part
