Tips for success
For the best texture, use refrigerated tortellini rather than dried, as they hold up better during the long slow-cook time. If you prefer a spicier dish, add a pinch of red pepper flakes when layering the ingredients.
You can also add a splash of heavy cream or a pat of butter at the end for extra richness, though the ricotta and provolone already provide plenty of creaminess.
To make this dish even easier, assemble the slow cooker insert the night before, cover, and refrigerate. In the morning, simply place the insert in the slow cooker and start cooking.
This is a great make-ahead meal for busy days. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop or in the microwave.
Variations
- Spicy Sausage Twist: Replace half the meatballs with cooked Italian sausage slices. Add a pinch of red pepper flakes for heat. The sausage adds a savory, spicy note that pairs well with the creamy cheese.
- Vegetarian Option: Use plant-based meatballs and your favorite cheese tortellini. Ensure the vegan meatballs are cooked through. The sauce and cheeses remain the same, making a hearty vegetarian meal.
- Extra Veggie: Add a cup of baby spinach or chopped zucchini along with the sauce. The vegetables will cook down into the sauce, adding nutrition and flavor without changing the cooking time.
- Cheese Swap: Substitute the provolone with smoked mozzarella or a blend of Italian cheeses. Smoked mozzarella adds a subtle smoky flavor that complements the marinara beautifully.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water or sauce to restore creaminess.
- Freezer
- This dish freezes well for up to 2 months. Cool completely, transfer to a freezer-safe container, and thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, or in the microwave in 30-second bursts until hot.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will continue to meld, making the leftovers even more delicious. When reheating, add a splash of water or marinara to loosen the sauce, and warm gently on the stovetop or in the microwave until heated through.
This dish can be assembled up to 24 hours in advance. Layer all ingredients in the slow cooker insert, cover, and refrigerate. When ready to cook, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time if starting from cold. This is perfect for meal prep or entertaining.
Serving ideas
Serve this hearty pasta bake straight from the slow cooker for a casual, family-style meal. Pair it with a crisp green salad dressed with lemon vinaigrette to cut through the richness, and offer crusty bread for soaking up the extra sauce.
A sprinkle of fresh basil or parsley on top adds a pop of color and freshness, though it's not necessary.
For a more formal presentation, plate individual portions with a spoonful of the sauce and a few meatballs on top.
This dish also works well as a party main course—set up a buffet with the slow cooker and let guests help themselves. The leftovers are just as good the next day, so make extra if you want to enjoy it twice.

Crockpot Provolone Meatball Marinara Tortellini

Ingredients
- 2 lb homestyle Italian beef meatballs
- 1 lb refrigerated three-cheese tortellini
- 24 oz crushed San Marzano marinara sauce
- 1 cup whole-milk ricotta cheese
- 2 cups shredded provolone cheese
Instructions
- Place the beef meatballs in an even layer in the bottom of a 6-quart slow cooker. Spread the refrigerated three-cheese tortellini over the meatballs, then pour the crushed San Marzano marinara sauce evenly over the top, making sure the sauce covers most of the pasta and meat.
- Spoon dollops of whole-milk ricotta over the sauce, spacing them out. Then sprinkle the shredded provolone cheese evenly over the entire surface, covering the ricotta and the sauce.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the meatballs are heated through and the tortellini are tender. Do not stir during cooking to keep the cheese layer intact.
- After the minimum cooking time, check that the meatballs are fully cooked. Insert an instant-read thermometer into the center of a meatball; it should read at least 160°F (71°C). If not, continue cooking and check again in 15 minutes.
- Turn off the slow cooker and let the dish rest, uncovered, for 5 to 10 minutes. This allows the sauce to thicken slightly and the cheese to set, making it easier to serve.
- Spoon the slow-cooked pasta and meatballs onto plates or bowls, making sure to get some of the melted cheese and sauce with each serving. Serve hot.
