Tips for success
For the best flavor, use a high-quality jarred sauce with roasted garlic and basil. If you have time, you can make your own sauce, but a good jarred variety works perfectly.
Do not skip the ricotta dollops; they add a creamy richness that balances the acidity of the tomatoes.
To ensure the pasta cooks evenly, make sure it is mostly submerged in the sauce. If the sauce seems too thick, add a splash of water or chicken broth.
Let the dish rest for a few minutes before serving to allow the sauce to thicken slightly. Garnish with fresh basil or parsley if desired, though the video does not include it.
Variations
- Spicy Sausage Version: Replace half the chicken with sliced Italian sausage. Brown the sausage in a skillet before adding to the slow cooker to develop extra flavor. The spice from the sausage will infuse the sauce.
- Vegetarian Option: Omit the chicken and add 2 cups of sliced mushrooms and 1 cup of baby spinach. Layer the vegetables with the pasta and sauce. The cooking time remains the same, but the dish becomes a hearty meatless meal.
- Cheesy Herb Twist: Mix 1 teaspoon of dried Italian seasoning and 1/2 teaspoon of garlic powder into the ricotta before dolloping. This adds an extra layer of herbaceous flavor. Top with fresh basil before serving.
- Creamy Tomato Version: Stir 1/2 cup of heavy cream into the sauce before cooking for a richer, creamier tomato sauce. The cream also helps to mellow the acidity of the tomatoes. Adjust the salt to taste.

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop with a splash of water to loosen the sauce.
The pasta will continue to absorb liquid, so add a little broth or water when reheating to keep it creamy.
This dish is ideal for making ahead. Assemble the ingredients in the slow cooker insert and refrigerate overnight, then start cooking the next morning.
You can also cook the entire dish and refrigerate it for up to 2 days before serving; reheat gently on the stovetop or in the slow cooker on low.
Serving ideas
Serve this hearty pasta as a main course with a simple green salad and crusty bread to soak up the extra sauce. It also pairs well with roasted vegetables or a side of garlic bread. The portions are generous, making it perfect for family dinners or meal prep.
For a more indulgent presentation, top each serving with extra shredded provolone or a sprinkle of fresh basil. The dish is rich and satisfying on its own, so keep sides simple. This recipe is a crowd-pleaser and works well for potlucks or casual gatherings.

Crockpot Provolone Chicken Bolognese Rigatoni

Ingredients
- 2 lb boneless skinless chicken breasts, cut into bite-sized cubes
- 1 lb rigatoni pasta
- 1 jar roasted garlic tomato basil sauce (about 24 oz)
- 1 cup whole-milk ricotta cheese
- 2 cups shredded provolone cheese
Instructions
- Place the cubed chicken breast pieces in the bottom of a 6-quart slow cooker in an even layer. Scatter the rigatoni pasta over the chicken, then pour the jar of roasted garlic tomato basil sauce over the top, making sure the pasta is mostly covered. Stir gently to combine the pasta with the sauce, but avoid disturbing the chicken too much.
- Drop spoonfuls of the whole-milk ricotta over the top of the sauce, spacing them evenly. Sprinkle the shredded provolone cheese over everything, covering the surface completely. Do not stir the cheese into the sauce; leave it as a top layer.
- Cover the slow cooker and cook on LOW for 4 hours, or on HIGH for 2 to 3 hours, until the chicken is cooked through and the pasta is tender. Do not open the lid during the first 3 hours of cooking on LOW or 1 hour on HIGH, as the heat escapes and slows the cooking.
- After the cooking time, use an instant-read thermometer to check the internal temperature of the chicken pieces. The chicken is safe to eat when it registers at least 165°F (74°C). If not done, continue cooking for another 15 to 30 minutes and check again.
- Once the chicken is done, gently stir the pasta and sauce to incorporate the melted cheese. Spoon the hot pasta onto plates or into bowls, making sure each serving gets plenty of chicken, sauce, and cheese. Serve immediately while bubbling hot.
