Tips for success

For the most flavorful gravy, use a good-quality beef broth-based gravy, or enrich a store-bought version with a splash of Worcestershire sauce or a spoonful of tomato paste.

If you prefer a thicker sauce, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking. Let it bubble until thickened.

To make the meal even easier, serve the pot roast straight from the slow cooker with crusty bread or egg noodles to soak up the gravy.

Leftover shredded beef is fantastic in sandwiches, over mashed potatoes, or stirred into a hearty soup. Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.

Variations

  • Herb-Infused: Add 2 sprigs of fresh rosemary and 3 sprigs of thyme to the slow cooker along with the gravy. Remove the herb stems before serving for a fragrant, earthy note that complements the beef.
  • Onion and Mushroom: Layer 1 large sliced onion under the roast and add an extra 4 oz of mushrooms. The onion caramelizes slowly, adding sweetness to the gravy and extra depth to the dish.
  • Spicy Kick: Stir 1 teaspoon of smoked paprika and 1/2 teaspoon of crushed red pepper flakes into the gravy before pouring it over the roast. This adds a subtle warmth that enhances the beefy flavor.
  • Red Wine Gravy: Replace 1/2 cup of the beef gravy with dry red wine. The wine deglazes the slow cooker and adds a rich, complex flavor that pairs beautifully with the mushrooms.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a little beef broth to loosen the sauce if necessary.

Store leftover pot roast and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the sauce has thickened too much.

This recipe is ideal for meal prep. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate overnight. In the morning, place the insert in the slow cooker and cook on low as directed.

You can also cook the roast a day ahead, then reheat it gently before serving—the meat becomes even more tender after resting in the sauce.

Serving ideas

Serve this pot roast as a hearty main course with mashed potatoes, buttered egg noodles, or creamy polenta to soak up the rich gravy. A side of roasted green beans or a crisp green salad balances the richness. For a casual meal, pile the shredded beef onto toasted brioche slider buns and top with a spoonful of the mushrooms and gravy.

Garnish with a sprinkle of fresh chopped parsley or thyme for a pop of color, if desired. The dish is satisfying on its own, but a glass of full-bodied red wine, such as Cabernet Sauvignon or Merlot, pairs beautifully with the deep beefy flavors.

Leftovers can be transformed into a quick lunch by reheating and serving over rice or in a warm tortilla.

Frequently asked questions

Can this recipe be made with a different cut of beef?
Yes, chuck roast or brisket work well, as they have similar fat content and become tender with slow cooking. Adjust the cooking time as needed—chuck may cook slightly faster, while brisket may take longer. Always check for fork-tenderness rather than relying solely on time.
Why is the beef tough after cooking?
If the beef is tough, it likely wasn't cooked long enough or was cooked on too high a heat. The collagen needs time to break down, which happens best on low heat over 8 to 10 hours. Make sure the meat is fully submerged in the gravy and cook until it shreds easily with a fork.
Can this recipe be doubled?
Yes, but be mindful of your slow cooker's capacity—it should be no more than two-thirds full. If doubling, increase the gravy slightly and extend the cooking time by 1 to 2 hours. Check for doneness with a fork, not just temperature.
Can this be made ahead and frozen?
Absolutely. Cook the roast, let it cool completely, then store in a freezer-safe container with the gravy. Freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave. The flavor may even improve after freezing.
What can be served with this pot roast?
This dish pairs well with mashed potatoes, egg noodles, rice, or crusty bread to soak up the gravy. Roasted vegetables like carrots or green beans add color and balance. For a low-carb option, serve over cauliflower mash or alongside a simple green salad.
