Four ingredients of effort, one pot of comfort: seasoned boneless pork chops, a blanket of frozen potato tots, and a creamy cheddar sauce that comes together in a bowl and pours over the top. The slow cooker does the rest while the day goes on. No browning, no stirring, no second pan — just layer, cover, and come back to dinner.
This is the casserole for the nights when dinner has to happen on its own. Everything goes into the slow cooker raw and cold: a fan of boneless pork chops, a layer of frozen potato tots poured straight from the bag, a dusting of garlic and onion powder, and a thick cheddar-soup sauce stirred together in a bowl and spooned over the top.
Four to five hours on Low later, the chops are braised soft, the tots have soaked up the sauce from the edges, and the whole pot smells like a diner plate special. The finished chop lifts out tender, with no sear and none needed — the sauce has done the flavoring. One insert, one bowl, one spoon to wash. It earns a permanent place in the rotation precisely because it asks for so little.
Ingredients
- 4 boneless pork chops, about 6 oz each
- 1 lb frozen potato tots
- 1 tsp garlic powder
- 1 tsp onion powder
Cheddar sauce
- 1 can (10.5 oz) condensed cream soup, chicken flavor
- 1 cup shredded cheddar cheese
Why this recipe works
The method works because the slow cooker braises rather than bakes. The pork chops sit closest to the heat, submerged in the sauce that runs down from above, so they cook gently in liquid instead of drying out — exactly how chops stay tender through a long cook.
The condensation and the soup keep the insert humid, which is why the finished surface looks soft and glossy rather than browned.
The frozen tots are the structural trick. Added straight from the freezer, they hold their shape for the first hours, then slowly absorb the cheddar sauce and release starch, which thickens the liquid into a proper sauce instead of a watery puddle.
Stirring the cheese into the cold soup before it ever meets heat keeps it distributed, so the sauce stays creamy and flecked rather than clumping into one melted mass.
Notes and substitutions
Choose boneless pork chops about an inch thick and roughly the same size, so they finish together; very thin chops turn to shreds, very thick ones need the full five hours.
The condensed cream soup is the classic base, not ready-to-serve — it is the thickness that makes the sauce. Shred the cheddar from a block if possible; pre-shredded cheese carries anti-caking starch that can make the sauce slightly grainy.
A 6-quart oval slow cooker fits four chops and a pound of tots without crowding; anything smaller, cut the recipe proportionally. The tots should stay frozen until the moment they go in. If the sauce looks thin at hour three, that is expected — it thickens in the final stretch as the starch releases. Leftovers cool for no more than 2 hours before going into the refrigerator.
- boneless pork chops: Boneless pork loin or bone-in chops work the same; bone-in pieces may need the longer end of the cooking time.
- condensed cream soup: Cream of mushroom or cream of celery soup swaps in directly and keeps the sauce just as creamy.
- shredded cheddar cheese: A cheddar blend, Colby Jack or Monterey Jack melts smoothly; grate it yourself so it melts without turning grainy.
- frozen potato tots: Frozen diced potatoes or shredded hash browns work; keep the same weight and expect a softer texture.
