Tips for success

For the best flavor, sear the pork chunks in a hot skillet with a little oil before adding them to the slow cooker.

This adds a caramelized crust that deepens the overall taste, though it is optional for a truly dump-and-go version. If you do sear, do not skip the rest time after shredding.

If you prefer a spicier dish, use a hotter enchilada sauce or add a diced jalapeño with the pork.

For a milder version, choose a mild sauce and use Monterey Jack instead of the Mexican blend. The slow cooker is forgiving, so adjust the seasoning to taste before serving.

Variations

  • Beef version: Swap the pork shoulder for beef chuck, cut into chunks. Cook on low for 8 to 10 hours until fork-tender. Shred and serve the same way.
  • Chicken version: Use boneless, skinless chicken thighs instead of pork. Cook on low for 6 hours, then shred. Chicken thighs stay moist and absorb the sauce well.
  • Add vegetables: Stir in a cup of frozen corn or diced bell peppers with the beans for extra color and texture. Add them at the beginning so they soften during cooking.
  • Spicy version: Add a chopped chipotle pepper in adobo sauce or a teaspoon of smoked paprika to the sauce for a smoky heat. Adjust the amount to taste.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of water to restore the sauce's consistency.
Freezer
Freeze cooled leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Add a little water or broth if the sauce has thickened too much.

Refrigerate leftovers in an airtight container for up to 4 days. The flavors will continue to meld, making it even better the next day. Reheat gently in the microwave or on the stovetop with a splash of water to loosen the sauce.

This dish can be assembled the night before: layer all ingredients in the slow cooker insert, cover, and refrigerate.

In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time because the ingredients start cold.

Serving ideas

Serve the pork carnitas casserole over Spanish red rice, as shown in the video, to soak up the rich sauce.

Alternatively, use warm corn or flour tortillas to make tacos, or spoon it into burrito bowls with lettuce, tomatoes, and avocado. The cheese and sauce make it a versatile filling.

For a complete meal, add a side of Mexican crema or a squeeze of lime for brightness. A simple green salad or sautéed vegetables balance the richness. This dish is hearty enough to be a main course on its own, but it also pairs well with refried beans or grilled corn.

Frequently asked questions

Can this recipe be made in an Instant Pot?
Yes, use the sauté function to brown the pork if desired, then pressure cook on high for 45 minutes with a natural release. Shred and serve as directed. The cooking time is much shorter than the slow cooker method.
What if the cheese doesn't melt completely?
If the cheese is not fully melted after cooking, cover the slow cooker and let it sit for 10 minutes. The residual heat should melt it. Alternatively, place the slow cooker insert under the broiler for a few minutes to brown the top, watching carefully.
Can this dish be made without cheese?
Yes, simply omit the cheese for a dairy-free version. The sauce and pork will still be flavorful. Add a dairy-free cheese alternative if desired, or just serve with avocado or crema on the side.
How spicy is this recipe?
The spice level depends on the enchilada sauce you use. Mild sauces are not spicy, while medium or hot sauces add heat. Choose a sauce that matches your preference, and taste before serving to adjust.
Can leftover sauce be used for other dishes?
Absolutely. The leftover sauce is great over eggs, as a topping for nachos, or mixed into rice. Store it in the refrigerator for up to a week or freeze for later use.

Crockpot Pork Carnitas Enchilada Casserole

Prep 10 minCook 8 hTotal 8 h 10 minServes 6
Slow cooker full of pork carnitas with melted Oaxaca cheese and red enchilada sauce, bubbling and steaming

Ingredients

  • 3 lb pork shoulder, cut into 1-inch chunks
  • 2 cups red enchilada sauce
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 8 oz Oaxaca cheese, shredded
  • 1 cup Mexican four-cheese blend, shredded
  • Spanish red rice, for serving

Instructions

  1. Place the pork shoulder chunks in the bottom of a 6-quart slow cooker. Pour the red enchilada sauce over the pork, then add the drained pinto beans. Stir gently to coat the meat and beans with sauce.
  2. Sprinkle the shredded Oaxaca cheese and the Mexican four-cheese blend evenly over the pork and sauce. Do not stir; the cheese will melt into a blanket as it cooks.
  3. Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, until the pork is fork-tender and easily shreds. The cheese will melt and bubble around the edges. Let it rest for 3 minutes before slicing.
  4. Once the pork is tender, use two forks to shred the meat right in the slow cooker. Stir the shredded pork into the sauce and beans. Let the meat rest for at least 3 minutes before serving.
  5. Spoon a generous portion of the pork mixture over warm Spanish red rice on each plate. The cheese will be melted and the sauce will soak into the rice.
