Before you start

Before starting, gather all your ingredients. If using sausage links, remove the casings. Chop the broccoli into small florets. Soften the cream cheese to room temperature for easier melting.

No need to pre-cook the pasta or brown the sausage unless you prefer extra flavor. Having everything ready makes the dump-and-go process even quicker.

Ingredients at a glance (7)
  • 4 oz thick-cut cup-and-char pepperoni slices
  • 1 lb mild or sweet Italian sausage, casings removed
  • 12 oz penne pasta
  • 3 cups fresh broccoli florets
  • 1 jar (15 oz) creamy garlic parmesan Alfredo sauce
  • 8 oz cream cheese, softened
  • 2 cups shredded whole-milk mozzarella cheese

Instructions

Phase 1: Layering the Base

  1. Layer the Meat
Place the pepperoni slices and Italian sausage crumbles directly into the bottom of the slow cooker. If using sausage with casings, remove the casings and break the meat into small pieces with your hands or a spoon. Spread them evenly to cover the bottom.
Look for The bottom of the Crockpot is covered with a single layer of pepperoni and sausage.
Tip For extra browning, sear the sausage in a skillet before adding to the slow cooker, but it's not necessary.
  2. Add the Pasta and Broccoli
Add the penne pasta and broccoli florets over the meat. Toss gently to combine with the meat, ensuring the pasta and broccoli are distributed evenly.
Look for Pasta and broccoli are nestled among the meat pieces.
Tip No need to cook the pasta beforehand — it will cook in the sauce.
  3. Pour the Alfredo Sauce
Pour the jar of Alfredo sauce over the pasta and broccoli. Use a spatula to scrape every bit of sauce from the jar. Stir gently to coat the pasta and broccoli with the sauce.
Look for The sauce evenly coats the pasta and broccoli, creating a creamy base.
Tip If the sauce is very thick, add a splash of chicken broth or water.

After this phase, the slow cooker contains a colorful mixture of meat, pasta, and broccoli, all coated in a creamy Alfredo sauce.

The pepperoni and sausage are nestled at the bottom, and the pasta and broccoli are evenly distributed. The sauce should be evenly coating everything, creating a creamy base for the cheeses to melt into.

Phase 2: Slow Cooking

  1. Add the Cream Cheese and Mozzarella
Place the block of cream cheese in the center of the slow cooker. Sprinkle the shredded mozzarella over the top, covering the cream cheese and the rest of the mixture.
Look for The cream cheese sits in the middle, surrounded by shredded mozzarella.
Tip Soften the cream cheese beforehand so it melts more smoothly.
  2. Cover and Cook on Low
Cover the slow cooker and cook on low for 4 hours, or on high for 2 hours, until the pasta is tender and the sauce is bubbling. Stir gently halfway through cooking if possible, but avoid over-stirring to prevent the pasta from breaking.
Look for The sauce is bubbling at the edges and the cheese is melted and creamy.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Cooking on low gives the pasta time to absorb the sauce without becoming mushy.

As the slow cooker works, the sauce will begin to bubble around the edges, and the cream cheese and mozzarella will melt into a velvety, creamy sauce. The aroma of garlic, herbs, and cheese fills the kitchen. The pasta is absorbing the sauce, becoming tender. The sausage is cooking through, releasing its savory juices.

Phase 3: Final Stir and Serve

  1. Stir and Check the Sausage
Stir the mixture gently to incorporate the melted cream cheese and mozzarella into the sauce. Check that the sausage is cooked through, reaching an internal temperature of 160°F (71°C).
Look for The sauce is smooth and creamy, with no visible chunks of cream cheese.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use an instant-read thermometer to verify the sausage temperature.
  2. Serve Hot
Spoon the hot pasta onto plates or into bowls. Serve immediately, with extra mozzarella or parmesan on the side if desired.
Look for The pasta is steaming and the cheese stretches as you scoop.
Tip Let the dish rest for a few minutes before serving to allow the sauce to thicken slightly.

The dish is ready when the pasta is tender, the sauce is thick and creamy, and the cheese is fully melted and stretchy. The sausage is cooked through, and the entire mixture is bubbling. The texture is rich and comforting, with each component coated in a luscious, cheesy sauce.

Common mistakes

One common mistake is overcooking the pasta, which can turn mushy. Stick to the recommended cooking times and check early. Another is using too much liquid; the Alfredo sauce and meat juices provide enough moisture, so avoid adding extra broth unless absolutely necessary.

Also, resist the urge to stir too frequently, as this can break the pasta. Finally, ensure the sausage is fully cooked before serving, especially if you added it raw.

How to tell it’s done

The dish is done when the pasta is tender and has absorbed most of the sauce, and the sausage is cooked through to an internal temperature of 160°F (71°C).

The sauce should be bubbling and the cheese completely melted. To test, taste a piece of pasta — it should be al dente but not crunchy. If the pasta is still hard, cook for an additional 30 minutes and check again.

  • Ground meat: 160°F (71°C) in the thickest part
