Tips for success
For the best texture, use boneless, skinless chicken thighs. They stay moist during the long cook time and shred beautifully.
If you only have chicken breasts, reduce the cooking time to 3 hours and check for doneness early to prevent dryness. You can also add a splash of chicken broth if the sauce seems too thick.
To make this dish even more flavorful, you can sear the chicken thighs in a skillet before adding them to the slow cooker. This adds a nice caramelized crust and depth of flavor.
However, the recipe works perfectly without this step, so it's optional. If you like extra heat, add a diced jalapeño or a pinch of cayenne pepper with the vegetables.
Variations
- Spicy Chipotle: Add 1-2 chipotle peppers in adobo sauce, minced, along with the salsa. This adds a smoky, spicy depth. Reduce the pepper jack if you prefer less heat, but the chipotle pairs beautifully with the queso.
- Extra Veggie: Add sliced zucchini, mushrooms, or corn along with the bell peppers. These vegetables hold up well in the slow cooker and add more texture and nutrients. Increase the salsa slightly if needed to keep everything saucy.
- Beef Fajita: Substitute beef sirloin strips or flank steak for the chicken. Cook on low for 6-8 hours until the beef is tender. Shred or slice the beef and proceed with the same sauce and vegetables. Adjust the cooking time based on the cut.
- Creamy Green Chile: Use green enchilada sauce or salsa verde instead of red salsa. Add a can of diced green chiles for extra flavor. This gives the dish a tangy, slightly sweet taste that pairs well with the cheese.

Reheat gently in the microwave or on the stovetop, adding a splash of water or broth if the sauce has thickened too much. This dish also freezes well for up to 3 months.
You can assemble the entire dish the night before, cover the slow cooker, and store it in the refrigerator. In the morning, simply place the insert in the slow cooker and cook on low as directed. You may need to add 30 minutes to the cooking time if starting from cold. This makes it perfect for busy mornings.
Serving ideas
Serve this fajita chicken over a bed of crispy tortilla chips for a fun, fork-friendly nacho-style meal. The chips provide a satisfying crunch that contrasts with the creamy, saucy chicken.
You can also spoon it into warm flour tortillas and top with your favorite fajita toppings like sour cream, avocado, or fresh cilantro.
For a more substantial dinner, serve the chicken over Mexican rice or alongside warm corn tortillas. The rice soaks up the delicious sauce, making every bite satisfying. You can also add a side of refried beans or a simple green salad for a complete meal. This dish is versatile and pairs well with many sides.
