Before you start

Before beginning, ensure your slow cooker is clean and positioned on a stable, heat-resistant surface. Have all ingredients measured and ready.

If your beef roast is tied with butcher's twine, you may choose to remove it before cooking or leave it on to help the roast maintain its shape during the long braising process. Ensure you have a serving platter large enough to accommodate the roast once it is tender and ready to be removed from the slow cooker.

Ingredients at a glance (4)
  • 3 lb beef chuck roast
  • 1/2 cup peach preserves
  • 1 tbsp garlic powder
  • 1/4 cup bourbon

Instructions

Preparation and Assembly

  1. Prepare the slow cooker
Place the beef chuck roast into the bottom of the slow cooker insert. Ensure the meat is positioned flat to allow for even cooking throughout the process.
Look for Meat is settled at the bottom
Tip Pat the beef dry with paper towels before placing it in the slow cooker for better searing potential if desired.

At this stage, the beef is positioned in the slow cooker and seasoned with the preserves, garlic, and bourbon. The ingredients should be layered as described to ensure the flavors meld correctly during the long, slow braise. Check that the slow cooker is plugged in and set to the low setting before covering the lid to begin the cooking process. Everything should look neat and ready for the long heat cycle ahead.

Slow Cooking Period

  1. Add flavorings
Spoon the peach preserves directly onto the top of the beef. Sprinkle the garlic powder evenly over the roast, then pour the bourbon carefully over the top of the preserves and meat.
Look for Ingredients are distributed over the meat
Tip Use a silicone spatula to ensure all the peach preserves are scraped from the spoon onto the beef.

During the cooking phase, the slow cooker will do all the work. You should smell the savory aroma of beef mixed with the sweetness of peaches and the warmth of bourbon as the hours progress. Avoid opening the lid, as the trapped steam is necessary for the braising process. The meat should remain submerged in its own juices and the added liquids, ensuring it stays tender and flavorful throughout the entire duration.

Final Resting and Serving

  1. Cook and serve
Cover the slow cooker and cook on low for 8 hours until the beef is fork-tender. Ensure the internal temperature reaches at least 145°F (63°C). Once finished, remove the roast and let it rest for at least 10 minutes before slicing to retain juices.
Look for Beef pulls apart easily with a fork
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip The liquid remaining in the slow cooker can be reduced in a saucepan to make a flavorful glaze for the meat.

Once the cooking time is complete, the roast should be incredibly soft. Use two forks or a sturdy pair of tongs to carefully remove the roast to a serving platter. The liquid remaining in the slow cooker will be dark, rich, and fragrant.

Allow the meat to rest for at least 10 minutes. This resting period is critical for the texture, as it allows the fibers to relax and reabsorb the flavorful juices before you carve or shred the meat.

Common mistakes

Avoid lifting the slow cooker lid during the cooking process, as this releases heat and moisture, significantly increasing the total cooking time and potentially drying out the meat. Do not rush the cooking; if the beef is not yet tender, it simply needs more time.

Another common mistake is using a cut of meat that is too lean, like a round roast, which will not become tender in the slow cooker; always stick to chuck roast for this specific preparation.

How to tell it’s done

The pot roast is fully cooked when it reaches an internal temperature of at least 145°F (63°C). Visually, the meat should be incredibly tender and easily pull apart when tested with a fork.

The connective tissue should have completely broken down, and the exterior of the roast will appear dark and glossy from the peach and bourbon reduction. Always allow the meat to rest for at least 10 minutes before slicing, as this ensures the internal juices redistribute, keeping the meat moist.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
