Tips for success
For the best texture, use a thick, rich roasted red pepper cream sauce. If you have time, make it from scratch by blending roasted red peppers with heavy cream, garlic, and a touch of smoked paprika.
This adds a deep, smoky flavor that complements the pepperoni and sausage perfectly. If using a store-bought sauce, choose one that is not too watery to prevent the pasta from becoming mushy.
To ensure even cooking, do not stir the layers after adding the pasta and sauce. The pasta needs to sit in the liquid without being disturbed to cook evenly.
If you prefer a spicier dish, use hot Italian sausage or add a pinch of red pepper flakes to the sauce. For extra cheese pull, add an additional 1/2 cup of shredded mozzarella during the last 10 minutes of cooking.
Variations
- Spicy Arrabbiata: Swap the roasted red pepper cream sauce for a spicy arrabbiata sauce and add 1/2 teaspoon of red pepper flakes for extra heat. Use hot Italian sausage and top with extra crushed red pepper before serving.
- Vegetarian Version: Omit the pepperoni and sausage and add 2 cups of sliced mushrooms and 1 cup of chopped spinach. Use a mushroom-based cream sauce or a roasted red pepper sauce for a meatless dinner.
- Chicken and Pesto: Replace the sausage and pepperoni with 1 pound of cooked, shredded chicken. Use a basil pesto cream sauce instead of the red pepper sauce, and top with mozzarella and Parmesan.
- Four-Cheese Classic: For a more traditional mac-and-cheese style, skip the pepperoni and sausage and add 1 cup of heavy cream to the sauce. Use a blend of cheddar, Gruyere, mozzarella, and Parmesan for the topping.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a microwave-safe dish in 1-minute intervals, stirring between, or in a saucepan over medium heat.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will continue to absorb sauce, so you may want to add a splash of water or extra sauce when reheating. Let the dish cool for no more than 2 hours before refrigerating.
This recipe can be assembled the night before: layer the ingredients in the slow cooker insert, cover, and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook on low for 4 to 5 hours. You may need to add 30 minutes to the cooking time since the ingredients start cold.
Serving ideas
Serve this pasta bake hot, straight from the slow cooker, with a generous spoonful of the creamy sauce.
It pairs well with a crisp green salad dressed with lemon vinaigrette and a slice of garlic bread for sopping up the sauce. For a low-carb option, skip the bread and serve with roasted vegetables.
This dish is hearty enough to be a main course on its own. For a family-style dinner, place the slow cooker on the table and let everyone serve themselves. Top with extra grated Parmesan and a sprinkle of fresh parsley for color. Leftovers taste even better the next day as the flavors meld.

Crockpot Parmesan Pepperoni Sausage Red Pepper Shells

Ingredients
- 4 oz thick-cut pepperoni, sliced into rounds
- 1 lb Italian sausage, casings removed
- 12 oz medium conchiglie pasta shells
- 3 cups smoky roasted red pepper cream sauce
- 2 cups shredded Italian four-cheese blend
- 1/2 cup freshly grated Parmigiano-Reggiano cheese
Instructions
- Place the sliced pepperoni and the Italian sausage (casings removed) into the bottom of a 6-quart slow cooker. Break the sausage into crumbles with your hands or a spoon. Spread the pieces evenly over the bottom.
- Add the conchiglie pasta shells directly over the meat. Pour the smoky roasted red pepper cream sauce over the pasta, making sure the sauce covers most of the shells. Do not stir.
- Sprinkle the shredded Italian four-cheese blend evenly over the sauce. Then scatter the freshly grated Parmigiano-Reggiano over the top. Do not stir the layers.
- Cover the slow cooker with its lid. Cook on low for 4 hours, or until the pasta is tender and the sausage is cooked through, reaching an internal temperature of 160°F (71°C). Do not open the lid during the first 3 hours.
- After 4 hours, carefully remove the lid. Gently lift a few shells from the top to check that the pasta is tender but still holds its shape. If the pasta is still firm in the center, cover and cook for 20 to 30 minutes more.
- Turn off the slow cooker and let the pasta bake rest for 5 minutes. Using a large serving spoon, scoop the cheesy pasta and meat onto plates or into bowls. Serve hot.
