Tips for success
For the best flavor, use high-quality meatballs—either homemade or from a reliable butcher. If you make your own, season them generously with garlic, parsley, and Italian herbs.
The slow cooker mutes flavors slightly, so don't be shy with seasoning. Also, choose a good chicken cream broth; it's the backbone of the sauce. If you want a lighter version, use regular chicken broth and add a splash of cream at the end.
To prevent the gnocchi from becoming too soft, place them on top of the meatballs rather than at the bottom. The meatballs act as a barrier, keeping the gnocchi from sitting directly in the liquid.
Also, avoid stirring after the cheese is added—it will melt into a beautiful crust. If you prefer a more pronounced cheese pull, use fresh mozzarella in addition to the Italian blend.
Variations
- Spicy Sausage Twist: Replace the beef meatballs with spicy Italian sausage links, sliced into rounds. Cook as directed, but check the sausage reaches 160°F (71°C). Add a pinch of red pepper flakes with the cheese for extra heat.
- Vegetarian Version: Use vegetarian meatballs or omit them and add an extra cup of gnocchi and a can of drained cannellini beans. Use vegetable cream broth instead of chicken. Cook for the same time, or until the gnocchi are tender.
- Chicken and Pesto: Swap the beef meatballs for boneless, skinless chicken thighs cut into chunks. Stir 1/4 cup basil pesto into the broth before pouring. Cook until the chicken reaches 165°F (74°C). The pesto adds a fresh, herby note.
- Mushroom and Spinach: Add 1 cup sliced mushrooms and 2 cups fresh spinach along with the gnocchi. The spinach will wilt into the sauce as it cooks. Use a blend of mozzarella and fontina for a different cheese profile.

Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; when reheating, add a splash of chicken broth or water to loosen it. Reheat gently in the microwave or on the stovetop over medium-low heat, stirring occasionally until heated through. Avoid boiling, as it can make the gnocchi mushy.
This dish can be assembled in the slow cooker insert the night before, covered, and stored in the refrigerator. In the morning, place the insert in the slow cooker and cook on low as directed.
If starting from cold, add about 30 minutes to the cooking time. Alternatively, cook the dish fully, let it cool, and refrigerate it in the insert for up to 2 days before reheating.
Serving ideas
Serve this dish straight from the slow cooker for a casual family dinner, or plate it on a white porcelain plate for a more elegant presentation.
A crisp green salad with a simple vinaigrette balances the richness, and crusty bread is perfect for sopping up the creamy sauce. For a low-carb option, serve over sautéed spinach or roasted vegetables instead of bread.
This recipe is satisfying enough to stand alone, but it also pairs well with a side of garlic bread or roasted asparagus. For a touch of freshness, garnish with chopped parsley or basil just before serving. The leftovers are just as delicious—the flavors meld even more overnight. Enjoy it warm, with extra Parmesan on the table for sprinkling.

- 1 cup shredded Italian four-cheese blend
- 1/2 cup freshly grated Parmigiano-Reggiano
