Tips for success
For the best texture, cook the pasta on low rather than high. Low heat allows the pasta to absorb the sauce gradually without becoming mushy.
If you are short on time, you can cook on high for 2 to 3 hours, but check frequently to avoid overcooking. The exact time will depend on your slow cooker and the type of pasta, so start checking at the 3-hour mark on low.
To make the dish even richer, stir in a few tablespoons of butter or a splash of heavy cream just before serving. For a smoky depth, add a pinch of smoked paprika or chipotle powder to the sauce.
If you like a bit of heat, sprinkle red pepper flakes over the finished dish. The leftovers are even better the next day as the flavors meld further.
Variations
- Spicy Andouille Version: Replace the kielbasa with smoked andouille sausage for a spicier, Cajun-inspired flavor. Add a teaspoon of Cajun seasoning to the sauce and a pinch of cayenne for extra heat.
- Chicken and Roasted Pepper: Swap the kielbasa for 2 pounds of boneless, skinless chicken thighs, cut into chunks. Cook on low for 4 hours, then shred the chicken and stir before serving. Ensure the chicken reaches 165°F (74°C).
- Vegetarian Mushroom Version: Omit the kielbasa and add 1 pound of sliced cremini mushrooms and 1 cup of frozen peas. Sauté the mushrooms first to release their moisture, then layer as directed. The mushrooms add an earthy, meaty texture.
- Creamy Tomato Basil Variation: Use a tomato basil cream sauce instead of the roasted red pepper sauce. Add a handful of fresh basil leaves on top before serving for a fresh, herby note.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. Add a splash of milk or broth when reheating to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge and reheat gently on the stovetop or microwave.
- Reheat
- Reheat individual portions in the microwave for 2-3 minutes, or reheat the whole dish in a saucepan over medium heat, stirring occasionally, until hot.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will continue to absorb the sauce, so when reheating, add a splash of milk or broth to restore creaminess. Reheat in the microwave or on the stovetop over medium heat until warmed through.
This dish can be assembled up to 24 hours in advance. Layer the ingredients in the slow cooker insert, cover, and refrigerate.
When ready to cook, add an extra 30 minutes to the cooking time because the ingredients start cold. Alternatively, cook the full dish, then cool and refrigerate for up to 4 days. Reheat gently before serving.
Serving ideas
Serve the pasta hot, straight from the slow cooker, with a sprinkle of fresh parsley or basil if desired. A side salad with a bright vinaigrette balances the richness of the creamy sauce.
Crusty bread is perfect for sopping up any extra sauce. For a complete meal, add steamed broccoli or green beans alongside.
This dish is hearty enough to be a main course on its own. Portion into bowls for a casual family dinner, or spoon onto plates for a more formal presentation. The cheesy, smoky flavors pair well with a light red wine like Pinot Noir or a crisp lager. Leftovers make a satisfying lunch the next day.

Crockpot Parmesan Kielbasa Red Pepper Shells: Dump-and-Go Pasta

Ingredients
- 2 lb smoked kielbasa, sliced diagonally into 1/2-inch medallions
- 1 lb medium conchiglie pasta shells
- 2 cups smoky roasted red bell pepper cream sauce
- 2 cups shredded Italian four-cheese blend
- 1/2 cup freshly grated Parmigiano-Reggiano
Instructions
- Place the sliced kielbasa medallions in the bottom of a 6-quart slow cooker. Spread them into an even layer. Add the uncooked conchiglie pasta shells over the kielbasa, then pour the roasted red pepper cream sauce over the top, making sure the pasta is mostly covered. Do not stir.
- Sprinkle the shredded Italian cheese blend evenly over the sauce, followed by the grated Parmigiano-Reggiano. Do not stir. The cheese will melt and form a golden crust as the slow cooker heats.
- Cover the slow cooker and cook on low for 4 hours, or until the pasta is tender and has absorbed most of the sauce. Do not open the lid during the first 3 hours to keep the heat steady. After 3 hours, check the pasta for doneness; if it is still firm, continue cooking in 15-minute increments.
- Once the pasta is tender, stir the mixture gently to combine the melted cheese into the sauce and distribute the kielbasa. The sauce will thicken as it cools slightly. Taste and adjust seasoning if needed.
- Spoon the pasta onto warm plates or bowls. The dish is best served immediately while the cheese is still molten and the sauce is creamy. Garnish with extra Parmesan if desired.
